Big Bad Baptista is inspired by traditional Mexican coffee, Café de Olla, which is served with cinnamon and piloncillo, an unrefined sugar. The Cinnamon adds another layer of complexity and accentuates the earthy character of Mexican Coffee, but more importantly, it captures the essence of a place and its culture.

On tap at El Sainete, Madrid. Black with brown head. Lots of chocolate, coffee in aroma. Huge dense chocolate taste, coffee, bit spicy, cocoa, vanilla, nice balance between sweet middle and bitterish finish. Chocolate cake. Smooth. Full bodied. So good I had to order another one.

On tap at Irreale (stated as 12%) Pours pitch black with some dark brown shades; pale brown cream is thick but short-lived. Aroma is chocolate milkshake, i.e. cocoa, milk, vanilla icecream and cinnamon. Mouthfeel is super-velvety, soft as a kitten, silky as honeymoon bedsheets, fluffy as a pet rabbit. Then you get quite a bitter punch in the throat, but packed with all the milk choco and vanilla in the world, so it isn't aggresive at all. This is a strange one: on the one hand you have spades of alcohol and loads of IBUs; on the other this soft palate and choco flavor. So you go nuts and drink some more.
