When we first got our noses in and hands on the experimental hop, then known only as HBC 369 CV, we knew it was something special. We wanted to make a lower alcohol IPA that didn’t drink like many others we tried. There was good hoppiness to most of them, but the body seemed lacking.
We went to work on solving this, and it took a bit of time. When we were finally convinced our session IPA was ready for prime time, HBC 369 had been named: Mosaic.

We employ this chameleon cone -with its exceptional palette of flavors- at each stage in the hopping process. Paul has actually created a lower alcohol session ale with the flavor and body of an American IPA. This beer has developed a following in the active lifestyle crowd, especially with cyclists, but it’s also a great beer when you just want a little more hang-time with your IPA. Dedicated to our hop-loving friend, David Moes, we brew this beer for true hop heads.

Bottle @ home. Slightly unclear orange color, huge thick white head that lasts for a long time. Aroma is malts and quite fruity with fruity hops and tropical fruit influences. Taste malts, light to moderately hoppy, lightly floral, some fruit hops and general fruityness but not as clearly present as in the aroma. Soft bitterness, easy drinkable, suitable carbonation. Decent. [Note: probably way better when fresh, unfortunately I had a bottle with a best before date of July 2015].

35cl Bottle from drankgigant.nl. Clear golden amber colour, big frothy off-white head. Aroma of pine, melon, passion fruit, some toast, malts, pineapple. Flavour is medium sweet, malty, toast, pine, quite fruity, melon, some tropical stuff, bitter finish. Light bodied, over-carbonated, making it un-sessionable.

Amber colored, a bit cloudy, off white head with nice lacing. Aroma is mostly hops, flowery and fruity (elderberry comes to mind), bit citrus. Taste again floral and fruit hops with caramel malt background. Mediumish bitterness. Medium bodied and carbonation.

Bottled 355ml. -at O’Hara Zagreb. Clear golden coloured, medium sized white to off-white head, pleasant greapfruity/piney hoppy nose. Moderate malty, grapefruity fruity, light passion fruits and hint of herbs with decent hop bitterness in the finish. Rather fruity brew...and tasty indeed...

Nice darker pour of off yellow. Taste is initially a really big dull old ipa thud, borders on viscous. Who wants a big ipa hoppy bitter beer without the alky? Why punish eyrself? If you want a soft beer without the smoothness? What-ev.

Bottled, with Ribafish, at O’Hara Zagreb (enormous thanks Marin & co!). Poured a lovely clear amber body with a thick, quite big white head. Candied peach aroma, slightly more malty than expected, sugary, some lovely peach tea and dry figs. Very interesting. Lighter, and much more as expected hop dominated taste, herbal, peachy, slightly sweetish, notes of grapefruit, vague herbal tartness. Lovely aromatics really. A very good Session IPA, and a great addition to the Croatian market.

Draught at Taphouse Grille, Seattle
Beautiful amber color, clean, with creamy head. This brew is a bit smelly and creamy, the malts seem stale, there is enough bitterness but only a hint of hop quality.
An old tap? Unfresh, not very good.

Bottle thanks to Brian! Pours hazy reddish amber, large puffy off-white head that dissipates slowly and laces well. Aroma is not strong, but has pleasant notes of dank leaves, citrus, pine, a bit of armpit. Flavor has some light initial sweetness and light bitterness, lots of hop aromatics, a bit piney and not as tropical as I would expect from the Mosaic hop. Lightish body, but not bad for a 4.6% beer. Refreshing and drinkable.
