When we first got our noses in and hands on the experimental hop, then known only as HBC 369 CV, we knew it was something special. We wanted to make a lower alcohol IPA that didn’t drink like many others we tried. There was good hoppiness to most of them, but the body seemed lacking.
We went to work on solving this, and it took a bit of time. When we were finally convinced our session IPA was ready for prime time, HBC 369 had been named: Mosaic.

We employ this chameleon cone -with its exceptional palette of flavors- at each stage in the hopping process. Paul has actually created a lower alcohol session ale with the flavor and body of an American IPA. This beer has developed a following in the active lifestyle crowd, especially with cyclists, but it’s also a great beer when you just want a little more hang-time with your IPA. Dedicated to our hop-loving friend, David Moes, we brew this beer for true hop heads.

33 cL bottle. Pours cloudy with a small with a small white head. Aroma is grapefruity and light peachy. Smooth fruity, peachy and light citrusy. Crisp hoppy into a smooth finish.

#2700. Bottle @ America Strikes Back, Ulfborg. Pours clear amber with aiy white head. Clear aroma of hops with citric touches. Bitter, hoppy flavour, with estery notes and touches of citrus. Subtle fruity hints. Bitter and acetic aftertaste. Decent.

Pours slightly hazy deep golden with a white head. Aroma has notes of malt, caramel, orange and citrus. Taste is medium sweet and light to medium bitter. Body is medium, texture is thin to oily, carbonation is soft.

Bottle. Clear amber with small off-white head. Aroma is malt, caramel, fruit, hops, citrus, peach and grapefruit. Flavour is malt, fruit, grapefruit, hops, little sweet, citrus, pine, little earthy and medium bitter.

Tap at 2014 Capitol Beer Fest. Pours light amber with a slight white head. Mosaic aroma. Med body. Lots of tropical flavors. Dry and bitter - but far from harshly bitter. Lush is more like it. Nice and tasty.

Draft pour at Taphouse Grill. Amber color. A near perfect IPA with lots of piney hop flavors. Amazing aroma and taste to this beer. I could drink it all day. Very impressed.

12oz 4.6% abv bottle consumed at Skeptical Chemist in Scottsdale. It has a clear copper body that has gold hues and supports a near white head of foam. The aroma offers up candied tangelo and a touch of mango like fruitiness. Nice. The taste begins sort of woodsy to spicy with hops and then it picks up bitter citrus tangelo to clementine orange hoppiness. This is fresh and has a clean body that’s on the sessionable snappy side with bitter hops. Excellent session hoppy brew. Love it.
