Beret is as artistic as those who wear its namesake cap. Our brewers developed a silky, full-bodied wheat ale which we began fermenting with our house yeast strain. To finish the fermentation, we added our collection of barnyard bacteria, intended to slowly sour the ale, bringing out a slight funk and refreshing piquancy. Finally, a small dose of pureed raspberries were added for just a hint of fruity tannins, putting the berry in Beret.

Bottle thanks to Colin at Level 6. It pours cloudy orange with a small white head. The aroma is sweeet, tart, tangy, nectarine, mango, peachy, passion fruit, brioche and bready. The taste is crisp, dry, tart, sour, sherbet, nectarine, mango, goody mouth - pucker, acidic kick, oily, sugary, sherbet and earth with an acidic finish. Medium body and fine, foamy carbonation. Not bad.

Keg at brewdog Edinburgh. Pours golden orange, nose is funk, oak, sherbert, raspberry, taste is tart, juicy raspberry, quite sweet, light funk.

Bottle: Poured a bright golden color ale with a large pure white foamy head with good retention and some lacing. Aroma of sour and tart notes with some subtle raspberry flavours. Taste is a mix of sour notes with some oak and acidic notes with subtle raspberry flavours also noticeable. Body is about average with good carbonation. Enjoyable but lower acidic level would increase drinkability.

At tasting. Aroma of dry tart, oak, raspberry, cherry and funk. Taste of dry funky tart, oak, sourness, rich raspberry, citrus, strong funk, apricot, juice and a long fruity tart funky finish. This is good, Bruery really makes good sours.

Bottle @ Bruery Bonanza 2017. Hazy tiny burnt yellow pour with a frothy white head. Crackers, lemon juice, minerals & hay nose. Sour & slightly fruity taste. Yellow tropical fruits. Dry & tart mouth. This really opens up with some time in the glass. really good!

Tap at St. Augustine's. Raspberry nose with vinegar, funk. Hazy golden pink. Tart and fruits flavor, raspberries, funk, acid. Very tasty.

On tap at St. Augustine's during 54 taps Beerthirst event. Pours a hazy pale golden with a white head. Aroma is berries with some raspberry notes. Sjmular taste with moderate sourness and some very slight nail polisher notes. Quite pleasant.
