Beret is as artistic as those who wear its namesake cap. Our brewers developed a silky, full-bodied wheat ale which we began fermenting with our house yeast strain. To finish the fermentation, we added our collection of barnyard bacteria, intended to slowly sour the ale, bringing out a slight funk and refreshing piquancy. Finally, a small dose of pureed raspberries were added for just a hint of fruity tannins, putting the berry in Beret.

750ml bottle. Filtered orange-pink body. Bright, juicy sour tones. Respectable raspberry flavor. A little boozy at times, wine -like. Pleasant balance or melding of brett and rasp. Well done, the spices give it some nice depth.

Bottle split at 36 Levels Lost, picked up online, 17/04/18. Hazed golden with a decent off white covering. Nose is earthy fruit skins, pissoi, funk, caramel, brett, green berry skins. Taste comprises funk, damp straw, pissy citric shreds, green berry tang, damp straw, apple core. Medium bodied, fine carbonation, semi drying close. Decent enough sour ... not too in yer face and drinks easy for 9%.

Level 6 bottleshare. Thanks to Cloin. Light haze on this gold beer, small pale cream colour head. Light dry palate, fairly crisp. Sharp lemony sourness, very sharp. Light finish. Way too sharp for me, any other flavours that might be present are lost behind the sharp edges.

Bottle shared in London - cheers to Cloin. Pours hazy orange with a creamy, white head. The nose holds pine, tangerine, funky grapefruit, lemon. Light sweet flavour with mild wheat bread, lemon, acidic notes, peach. Medium bodied with fine to average carbonation. Clean and quenching finish, more lemon, peach, melon. Sturdy acidity. Solid.
