‘Chaos is a Friend of Mine’ is the result of blending barrels of our base beer to produce the flavor profile of a Belgian Lambic. We begin with a traditional grain bill composed of pilsner malt and raw wheat, which is then boiled for an extended amount of time with aged hops. The wort is then fermented and aged in neutral French oak barrels with our diverse house culture. Chaos ensues from the countless strains of yeast and bacteria fighting for dominance, and after 9 - 14 months in the barrel, we introduce the power of blending to bring order back, ultimately creating a beer that's greater than the sum of its parts. Funk takes center stage in this brew, with notes of barnyard, stone fruit, and aged hops. A balanced and clean acidity make this beer tart, yet extremely palatable, with a full body and crisp dry finish.

750mL bottle, at O'Brien's' and shared with BeerandBlues2, pours with a clear gold body that supports a thin near white head of foam. The aroma offers up muted wood, thin berry nuanced soured tartness and then acidic to thin vinegar tartness into the end of the draw. The taste delivers some refreshing puckering tartness leading into a moment of apple like fruitiness and then modest vinegar. Into the finish a wafer thin vanilla to spicy oak note joins the tartness to help create a pleasingly dry finish. Pretty dange solid sour with plenty of balance going on.

On tap at ratebeer best. Pours out a golden topped with a sma fizzy white head. Nose is great funky cheese horse blanket barnyard notes and wood. Taste is more of the nice funky bugs barrel notes spice wow this is great.

Hazy bright blond colour. Astringent, sour, with some funk.
Nice.

2017-09-20, tasting at SF, Vancouver, 6-3-7-3-14=33
Hazy golden color. The problem with these wanna be beers is that they smell like a Camambert, and no, real Lambic doesn't smell like that.
Besides that, there is a strong and pungent Lambic, the mouthfeel is oily, the acidity is moderate, it has some cobwebs, grapefruit peel, and light cheesy flavor.
Not too bad for a non Belgian and non Lambic brewery.

Funk, peel and light cheese. Cloudy gold with no head. Light sour, sharp funky notes and a light finish. Getting close to the style, but just short. Still decent and balanced

Hazy, light tan. No head. Big earthy barnyard, horseblanket nose. Fuzzy barrel notes. Earthy, tart, and a nice bitterness. I like the barnyard, I like the honeyish malt notes, and I like the barrel.

750mL bottle, pours a hazy golden with a small white head. Aroma brings out barnyard funk, with a touch of leather, and light acidity. Flavour is surprisingly convincing to an authentic lambic, with barnyard funk, oak barrels, light acidity and some lactic notes. Not exactly a real lambic, but it's pretty damn close. Complex and wonderfully constructed. Excellent.

750 c&c shared by Marcus. Pours gold with a transient white head. Aroma is mildly, pleasantly funky. Med body or so. Flavor is more lambic than quite a few USA beers labeling themselves as lambic.

Bottle at RateBeer Best. Pours a hazy yellow gold with small white head that diminishes quickly. The aroma is strong funk, cheese, oak, earth. Thin body. funky, grape, oak, nice tartness, very good.

Bottle shared by Levi, thanks! Pours a near clear yellow gold with a white head that dissipates to the edges. Aroma has earthy sour red fruits, lots of funk, light grass and a earthy oak backbone. Flavor has some acidic/sour fruits and a nice funk profile with some oak backing.
