Beavertown and Dogfish Head’s world collide. The brew concept is based around digging into the Berliner Weisse style of beer, as both Beavertown and Dogfish Head have a passion from brewing sours with our ‘Phantom’ series of sours and their Festina Peche, America’s first sour beer. We took London as the inspiration to drive the conception of the ingredients and built the recipe around the botanicals infused within the beautiful and worldwide famous London classic, Gin. For this we worked with our good buddies East London Liquor Company. They brought to the table Cubeb pepper, Juniper berries, pink grapefruit and Darjeeling tea. From Dogfish’s angle Sam flew over some dried orange flesh that they use in their Namaste brew and also we looked to infuse a little cucumber as this is one of the key ingredients in DFH ‘Jin’ made at their in house distillery. Sam also flew over some of DFH fresh hand-picked Amarillo and cascade hops to add to the boil. So we used around 75% extra malt and 25% wheat as the basis for the grain bill. We mashed in, ran the wort to the copper and used a pure lactobacillus to inoculate the wort. We reached our desired pH level of 3.4 after around 24 hrs and went to pasteurise the wort. Holding the wort at 82c for an hour allowed us to now add our boil infusions. The Cubeb, Juniper and dried organic orange flesh were loaded into the boil along with a little of both the Amarillo and Cascade just to add further character to the wort. The beer is to be dry hop.

Draught @ Furnace Inn, Duke Street, Derby, Derbyshire, England, DE1 3BX. [ As Beavertown / Dogfish Head Londonerweisse ].Unclear matt medium yellow color with a small to average, frothy, good - fair lacing, mostly diminishing, off-white head. Aroma is sour malt - yeast, citrus, tart. Flavor is moderate sweet and light to light moderate acidic with a average to long duration, fruity, citric, dry dry, tart, milky (lacto) notes. Body is medium, texture is oily to watery, carbonation is soft. [20150214] 7-2-8-3-15

Draught@SBWF2015. Orangeish red colour with a small head. Aroma is lactic, some raspberries and mild earthy notes. Flavour is lactic and earthy with some quite dry wooden notes. Wellbalanced and nicely tart.

Tap at SBWF2015. Bright red color, small pinky head. Lactic, red currant, strawberry aroma. Light-bodied. Very tart/lactic flavor, nice berry-fruity flavor. Blueberries, red currant, rhubarb. Great 2.8 drink.

Tap@ sbwf15. Red cherry look, dense white head. Cherries, barnyard notes, tartness in aroma. Flavor has red currants, cherry notes, barnyard. Raspberry notes. Palate cleanser.

On tap at Alvinne Craft Beer Fest in Vichte - Belgium March 2015 with markoijelena. Pours yellow cloudy, white cap leaving drafts and lacing. Nose: socks, esters. Mouth: kind of nice flowers, sweet nose, frizzy. OK

From tap. Pours hazy yellow with a small white head. Aroma is sage like, herbal, citric and zesty. Sour, dry and citric. Slight soapy. Lingering crisp fruity and citric finish.

@ ACBF 2015. Hazy yellow colour, white foam. Aroma of lemon, Calipo ice lolly, dishwasher water and soap. Tart and acidic with strange notes. Not the best from Beavertown.

Draft @ ACBF 2015. De couleur dorée, paille trouble, col épais blanc. Arôme au bouquet enivrant de sour mash avec un délicieux rétro-nasal herbacé et rendant tout à fait ce côté ’jardin botanique’ à l’anglaise. Un herbacé rappelant la coriandre avec un note de sauge. Palais est assurément centré sur l’aigreur, note herbacée bien présente. Palais râpeux avec un zeste citronné, petite note épicée et un rappel presque de baies de genévrier. Le profil grains, malt pâle reste bien là. Effervescence haute.
