Kollaborationsbier is Live Oak Pilz wort fermented in stainless steel with Jester King mixed culture. The Pilz wort is brewed at Live Oak and driven across town to Jester King for fermentation. This simple, crushable beer maintains much of the Live Oak Pilz character when young and fresh, then goes through a mixed culture metamorphosis in the bottle as it ages. 6.0% abv.

Bottle at Row 34 on 10/13/17.
Good clarity in this deep bronze-to-light-copper golden beer. Small white head atop shows moderate retention.
Soft honey, cracker, biscuit and light caramel in the nose lies underneath a fairly mild blanket of tart bacterial acids. Lemon-lime, apple-pear and light pepper phenols play nicely with the decocted pale malts, while the noble hops add gentle grass and herbal qualities. No alcohol or flaw, nothing weird going on here.
In flavor it's soft, malty, very dry, but not husky or thin, with light grass, peppery phenols, mild, well-lagered Brett acids adding lemon, lime, minor funk and mild lactic acidity, as well. Engaging, tight carbonation bolsters the perceived body and light biscuit and honey linger softly on end, in contrast to the moderate tartness. Very clean and well-executed beer.

Batch #5 - Aroma and flavour have super intense wine barrel-esque astringency. Clean at first but the dryness grows and grows. Batch #1 2016 - Hazy milky straw blond colour. The texture is quite thin and carbonation very high giving a soda water feek. Otherwise a bit of a lager with a lightly sharp edge.

Bottle from Whole Foods -Lamar. Tastes more like a witbier than a sour. Very grainy, in line with Live Oaks experience with wiezens. In the Saison ballpark, very subtle.

Bottle dated 9/15/15. It pours a clear golden yellow color with a good fizzy white head. Decent retention, but shrinks to a thin layer in about a minute. The aroma is kinda sweet with some honey and fresh wort. Big noble, Czech Saaz hop character. The flavor is not very wild at all. Lots of Saaz flavor and bitterness. Very earthy. Nicely developed maltiness as well. Pale malt with some melanoiden character. Still not picking up much wildness here. Maybe a touch of phenols, but the big Saaz character covers it up. Maybe in a year or two this will get more interesting. As it stands now, its a pretty tasty Czech Pils. I feel like I drank a Live Oak beer instead of a Jester King.... not saying that’s a bad thing.
