Mixed fermentation activated by Belgian yeasts and wild yeasts presents inside the oak vats. After 4 months the maturation continues for other 12 months in the oak vats where a lactic refermentation takes place thanks to the caramelized sugar and lactobacillus addition.

Tap@TCBW2015. Red/brown, thin near pink head. Funky nose, apricots, some buttery notes. The butter is noticeable in the flavor as well. Cherries, mild chocolate notes. Weird stuff.

On tap at Tallinn Craft Beer Weekend. Hazy caramel coloured with a tan head. Fairly fruity aroma with notes of sour berries, some vinous, almost balsamic vinegar notes and a hint of caramel and malt. Sweet and fruity with a moderate acidity. Pleasant and easy to drink, but wouldn’t mind more acidity. Anyway tasty and well crafted.

Bottle sample @ ACBF 2015.

No head, hazy red-brown beer. Sourish fruit, with lots of wood, wine on wood, and even some tannines suggested in the nose. Sour, lactic, red fruit, wine-ish (not really vinous, but sort of). Medium bodied at best, quite fruit-slick, even oily MF. Interesting...

Sampled bottled @ ACBF 2015. Clear amber brownish with no head. Nose is oxidized, balsamic vinegar, lots of oak, wood also has a vinegar quality to it. Taste is balsamic vinegar, lots oak, barrel, pretty one-note, red wine, light caramel,… Close to flat. Okay but nowhere near the top for the style or what it should be. (Thanks for sharing people!!!)

Smooth. Nice bourbon taste. Lactic taste. As Josh would say, fruity tooty.
