Mixed fermentation activated by Belgian yeasts and wild yeasts presents inside the oak vats. After 4 months the maturation continues for other 12 months in the oak vats where a lactic refermentation takes place thanks to the caramelized sugar and lactobacillus addition.

Tap at Ma Che, Roma, 11/02/14. Hazed chestnut brown with reddish hues with a well appointed light beige head. Nose is earthy, tarte grape skin, dank wood, burnt cherries, tarte berry fruit, light must. Taste comprises bitter berry fruits, tarte cherry skins, musty, earthy, dank wood effect, light fruit balsams. Medium bodied, fine carbonation, semi drying tarte fruit closure. Solid Flemish red !

Bottle at BD Shoreditch. It pours deep ruby-brown with a small off-white head. The nose is tart green apple, lemon sherbet, candy, chalk, sour melon, over-ripe fruits and wood. The taste is sour, tangy dark fruit, balsamic vinegar, some acidity, wood, light must, cranberry, dried cherry and red grapewith a dry finish. Medium body and fine carbonation. Bottle split at Torst. Pours reddish brown. Almost no head. Nose and taste of oak, grape, peach pit, light cherry vinegar, caramel and mature cheese. Medium body.

Bottle shared with Veitafan. Bottled 2009. Has a golden reddish amber colour with a very small off-white head. Lots of oak in the aroma along with sour berries, brown sugar, roasted almonds and some vinegar and heather. The taste is a light and nice version of the aroma. Slick mouth feel, and has a light bitterness. A wonderful sour ale that has a nice mix of sweet and sour.

375ml bottle pours a hazy garnet amber with some white head. Nose is nice, cherries, rhubarb, brown sugar, floral, piney. Flavor of cherries, rhubarb, malt, a little orange. Full, bright finish. Lightly acetic.

Bottle. 2010 vintage. Nose of vinegar, cherry, yogurt. Pretty, glowing brown-orange. Flavor is much less interesting: subtle malt, caramel, cherry, vinegar, grass, dry finish. Decent but not a top example of the style.

At a tasting, thanks troubles, hazy light rusty red, aroma of bourbon with some oxidation and hints of dried fruit and vinegar, flavour of caramel sourdough bread, quite sour but moderated by a light malty fruity sweetness. Easy drinking and quite nice.
