Mixed fermentation activated by Belgian yeasts and wild yeasts presents inside the oak vats. After 4 months the maturation continues for other 12 months in the oak vats where a lactic refermentation takes place thanks to the caramelized sugar and lactobacillus addition.

Bottle sample at a sour tasting at Noamโs office. Thanks troubles. 2010 bottle. Hazy reddish light brown. Aroma of malt, candies, cherries, must, sourness and wood. Sweetish-sourish flavor with malt, fruits, caramel and wood. Medium-bodied. A nice one.

A murky brown ale with a very thin light mocha head. In aroma, a nice mix of dark fruits, Brett, ground cherries, interesting. In mouth, a tart sour ale with ground cherries, thin, a bit of rubber, disappointing. Tasted with GRM, Puskinwow,Ian, Mike on Sept. 7 2012. Merci Sylvain!

Bottle: Poured a reddish color ale with a small foamy head with minimal retention and some lacing. Aroma of tart notes with some oak and light tart cherry flavour. Taste is also dominated by loads of oak notes with light tart cherry and light sour notes as well. Light vinous notes can also be detected. Body is a bit light with good carbonation and no apparent alcohol. Not bad though a bit lighter then some of their other offerings with not as much vinous notes.

Cloudy brown color, with small head. The aroma, along with expected elements, gets a dusty impression, a bit of plastic, traces of mint. Then the flavor gets better, with moderate fruity acidity, nice light astringency, some cherry impression. The final is even less sour.

Bottled, thanks fiulijn! Cloudy copper colour, small head. Tart cranberry aroma. Dryish with medium bodyand clean, rounded mouthfeel. Some lemon, some caramel. Some lingonberry and lactic acid. Low bitterness.

Pours hazy deep amber with a off-white head. Aroma has notes of malt, oak, vanilla, funk and caramel. Taste is medium sweet and light sour with a long sweet, oak, light sour and dry finish. Body is medium, texture is thin to oily, carbonaiton is soft.

cloudy red, small offwhite head. aroma is at first simple clean very nice sour, after that some wild yeast and complexitty kicks in. flavor is wild yeasty, beries, kinda light, mild spicy, hints of wood.
