Mixed fermentation activated by Belgian yeasts and wild yeasts presents inside the oak vats. After 4 months the maturation continues for other 12 months in the oak vats where a lactic refermentation takes place thanks to the caramelized sugar and lactobacillus addition.

Clear dark amber withan off-white head. Aroma is sweet, malty, caramel, fruity and moderate sour - barnyard and wood. Flavor is quite sweet and light acidic. Dry and light acidic finish. 280212

Bottle. Hazy dark amber with tiny off-white head. Aroma is malt, vingar, sour and cherries. Flavour is malt, red wine, little cherries, medium sour, vinegar, medium sweet and a littler dry.

Bottle. Nice head with good duration. Color is amber. Aroma and taste are brett, cherries, red wine, wood and malt. Sour nose but mild taste.

30/06/2011 Birra+ (375ml bottle). Bruna, intensa, riflessi color castagno, lieve schiuma bianco sporca con riflessi senape, abbastanza persistente. Aroma di malto, con note fruttate, acidule, di legno. In bocca è dolciastra, quindi acidula, con note di legno bene evidenti. Mancano un po’ di note lattiche. Corpo medio, carbonazione leggera. Buona birra, leggermente troppo giovane ma promettente, comunque interessante.

Bottle. Pours a brown amber color with a small off-white head. Has a fruity malty sour caramel aroma. Fruity malty sour tart caramel flavor. Has a fruity malty sour caramel finish.

375 ml bottle. Dark red body with a diminishing off-white head. Moderate funky aroma, acidic, vinegar and oak. Flavor is relatively acidic, fruity, bitter, oak, malt and hint of vinegar. Promising aroma and nice flavor, but some lack of balance at the end. Still a nice attempt at one of my favorite styles.

Borefts Beer Festival 3. Cloudy red brown beer. Residual tan head. Light palate, a little crisp and dry. Mild sourness, some vinegar. Nice oaky notes. Semi dry finish. Decent for a sour!

Boreft Beer Festival 2011. Cloudy copper with a small off-white head. Aroma of fruit and balsamic vinegar, and brett funk. Fruity tart flavour with cherry notes, and notable brett.

2012: Säuerlich herber Beginn, sehr erfrischend. Rund, die Säure wird zum Ende schwächer, dafür aber fruchtiger. Schön! 11/13/12/12//12 Wenig säuerlicher Antrunk, erfrischend. Dabei kaum fruchtig, fast wässrig. Wie bei den anderen Bieren der Brauerei ist ein gewisses Potential vorhanden, das aber nicht genutzt wird. /8/9/7//7

Flaske 0,375l. Gave fra Rune. Fortært i heimen 16 Okt 11. Pen flaske! Fiolett plasthette som må åpnes. Åpner med røyk. Rødbrun på farge. Veldig kortlivd skum. Syrlig fruktaroma. Veldig lite kullsyre. Smaken er syrlige plommer. Blir tørr etter hvert. Rimelig kjedelig. Litt bunnfall. (Vinmonopolet Vika, Oslo)
