Days of Being Wild is a series inspired by the tradition of lambic style brewing in Belgium. This is the first mixed fermentation program of its kind in Asia. With a mixed-culture fermentation featuring a medley of wild yeast and bacteria strains in a single foeder, these beers have haunting complexity, natural farmhouse funk and refreshing fruitiness.

This dried cherry edition takes it a step further with a second fermentation in Chardonnay barrels together with a generous addition of dried cherries. The combination of deep cherry flavor and vinuous notes from the barrels with a touch of residual sweetness makes for a beautifully balanced and yet incredibly complex beer.

Keg at Cloudwater Family & Friends 2020, Manchester Central, day two session one 21/02/20. Lightly hazed orange with an off white cap. Nose is tarte berry compote, venous notes, light funk. Taste comprises cherry skins, vanilla oak, dusty cherries, damp hay, light funk. Medium bodied, fine carbonation, semi drying close with a mellow pucker Not bad.

Soft cherries, nice barrel funk.sweet up front and a bit of dryness at the end. Two completely different pours from two different bottles, served side by side. Yes, one is the bottom of the bottle so there’s sediment, but incredible difference.

pitch black color. Tons of cherry, spice and dark chocolate. Off sweet and mildly tart.
