Soils – rich, deep loam soil
This tart apple orchard is located at the bottom of the deep and loamy valley floor, surrounded by forest on one side a stream on the other.
Arboriculture – The tall trees are protected from the wind by grassy strips, which promotes diversity. There were no added pesticides or insecticides in order to protect the environment. We are committed to keeping in compliance with organic production.
Cidrification – The apples were manually harvested from October to November. The fruits were stored in bags under shelter for better ripeness. The fermentation is managed in tanks and then blended with natural yeasts in oak barrels.
The cider is bottled in late April, with natural bubble formation and no added sulfur, non-carbonated and non-pasteurized. A second fermentation occurs in the bottle. Wild yeasts are necessary to make the natural foam, it can make some turbidity.

0.33 l bottle from 'Beerdome'. Hazy, golden amber with a few, quickly disappearing, white bubbles on top of it. Sweetish, slightly sourish, quite fruity and a bit funky aroma of ripe apple, walnut, light honey and a touch of hay. Minimally sweet, fairly dry, slightly sour, gently fruity and a little funky taste of ripe apple, hay, sulfur, iron and hints amof walnut, followed by a short, slightly tart, rather dry finish. Thin body, slightly astringent and rather effervescent mouthfeel, average to lively carbonation. Refreshing, rustic cider.

750mL bottle from La Bodega, pours a hazy golden with a quickly-dissipating white head. Aroma brings out a very nice barnyard funk character, hay, musty apple skins, and champagne-like effervescence. Flavour is fairly dry, with a champagne-like effervescence, moderate barnyard funk, light hay, and a touch of residual sweetness. Really nice use of the apples and nicely funky. Excellent.

Hazy pale golden with white head. Dry apple, lemony, lots if tannins, almond spice, green twigs, apple stem wood, barnyard goat funk, Lait Cru Camamebert. Delicate and tart. Light sweet, a bit more sour and moderate bitter. Medium body and soft carbonation. Dry minerallike feel. Bottle shared. Slight hazy dull golden. Huge barnyard funk in the nose with hay, donkey and diesel. Dry apple, lemon, pear, gooseberries, mineral, CO2, tart green apple. Lighr bitter and sour, very light sweet. Medium bodied, quite some carbonation and also quite dry. Quite dry, but a very decent Breton cider for people who love the barnyard stuff.

Bottle from Ciderwinkel, 25 cl sample. Hazy to almost cloudy golden color, medium head. Green apple, slight spicy, soft funky or leathery note, flowery, slight oak. The medium carbonation blends in perfectly and makes it almost saisonesque. Quite complex and not simply focused on just apple. Great stuff.
