[The Northbound Gravity Sessions 03]
We collaborated with the White Labs Copenhagen team to create this lavishly Citra hopped murk-beast. This is the third IPA in the Northbound Gravity Sessions series but the first one fermented with our unique Apex yeast blend - custom made for us by the danish yeast geniuses at White Labs. What emerged from the tanks was nothing short of a stellar india pale ale - a medium bodied, fruity New England style hazy IPA with a medium dry finish and bright fresh orange, grapefruit and lychee aromas. If that doesn’t sound like a beer you would put on your wishlist we’re not going to agree on much. Period.
Malts:
Maris Otter Extra Pale, Naked Oats & Torrefied Oats
Hops:
Citra & Citra Cryo
Yeast:
Apex Custom Blend

On tap at Dispensary, pours a cloudy pale golden blonde with a small white head. Aroma brings out dank hops and pithy stone fruits. Flavour is a bit seltzery, with stone fruits, dank hops, and mineraly notes. Those seltzery / mineraly notes are a bit off-putting, but the flavours behind are nice. Good but flawed.
