Bottle: Hazy, lots of floaties and clumps visible, small stable white head, orangey coloured; fruity vinegarish nose with a touch of artificial sweetness; dry sour flavour, light bodied; a light sweetness shows up in the otherwise dry vinegarish finish. Not so good.....

(33 cl bottle at The Rover, Göteborg) Shady pale golden color, big white fluffy head. Subtle acidic/sour scent. Nice sour taste with a hint of sweetness, some red apples and lemon. Metallic aftertaste. Spritzy to mouthpuckering sour mouthfeel, low bitterness.

250mL bottle, Best Before Feb 15, 2007, drunk on 10/28/2006. From the generous Jacob Lovenlund!
An actual white head, fairly frothy and moderate in height forms. Even better, the color is pretty appropriate for a gueuze. A touch darker than your typical Cantillon/3F/Girardin, but only because it has a pinch of copper-brass. Still predominantly golden. Sediment at the bottom is quite thick, as it should be, and leaving it behind, the beer has a medium to medium-high clarity. Tiny bubbles course upwards, steadily, in the liquid, keeping the head at cover, with some light trails of lacing.
What’s that?! I actually smell brett and lactobacillus in the nose, quite tart and refreshing. No cheap sugariness or plastic. Lemons and limes, with some moderate honey notes (dosent seem as fully attenuated as the best examples). Light oak aging is apparent as well, just a bit of tannic acidity to go along with the wild yeasts. Not the striking, infinitely sniffable nose of the best examples either, and funkiness is pretty limited to about as much funk as you can imagine from brett and lacto, but it’s resiliently clean for a brewer of this repute and positively blew away my expectations.
And the flavor keeps its end of the bargain as well. Some nectarine and lemon skins dry the palate out at first, driven by the brett, while some of residual pils malt sweetness mixes further to give a light apricot/peach flavor. Brett deepens somewhat and lactobacillus is added lightly, giving a modestly sour (though not sour in comparison to Cantillon et al) bite midway through. A touch of something lightly papery/sugary (faint, I can’t really put my finger on it) on the finish that seems to put a finish to the beer prematurely, but no powdered sugar/veggies/corn syrup here. Envigorating mouthfeel as well, with mostly small-bubbled carbonation giving a moderately tight feel in the mouth. Not watery, no alcohol noted. Thanks Jacob, I’m shocked!

As Timmermans Tradition Caveau Gueuze
Cloudy light amber color; thin but persistent head, continuous perlage. Strong aroma, sour, strong cellar character, cork. The mouthfeel is correct for a lambic; there is a sharp sour taste, with a clear citrus line; at the end is a bit astringent and metallic. Maybe short final, dry; but pleasant lambic overall.
