Can from my brother: pours mahogany with beige head. Aroma is mellow dark fruit and caramel aromas. Taste is somewhat sweet, malty, low bitterness. Not super complex. Pretty drinkable.

Tap at the brewery taproom in Philadelphia PA. A clear reddy copper coloured pour with a halo of beige head. Semi sweet, figgy pud, brown sugars, cakey malts mild booze. Flavour is composed of semi sweet, chewy hop cakey, malts, prune fig, lihjt bark. Palate is semi sweet chewy moderate carbonation. Good.

From old tasting notes. Deep Amber orange color. Bubbly tan head. Spicy aromatic malt nose. Tangy toasted malt flavor. With hints of orange peel and cinnamon. Delicious spicy hop character. Long spicy floral hop finish. Quite good.

Sampled from a12 oz brown bottle this beer poured a mahogany color with a small brown head. The aroma was strongly malty with notes of chocolate, caramel, and fruit. The flavor was tangy, very richly malty and had notes of nut, caramel, chocolate, apricot and apple. The finish was long, tangy, malty and fruity. The mouthfeel was thick and smooth. Well done.

Interesting beer, I have been looking to try it for a while and you would think its easy since its brewed in NY, unfortunately this is a contract brew for a Philly brewer. Finally found this on a trip through Jersey. It pours what at first looks like a brown color but upon closer examination it has a good amount of dark ruby red and some orange hues as well. It has little to no head even with some vigorous stirring. Basically, it looks syrupy, cause its dark and thick yet clear and headless, a definite foreshadowing to the rest of the beer. The aroma hits you on the nose and there one in one knows this is not going to be the traditional German doppelbock. Its full on over the top maltiness thats turned syrupy and just overly sweet for my preference (and I like sweet beer). There is plenty of alcohol present, also some light char, earthy bark, and a light off-putting fruit off flavor. The malt and the bigness of it are redeeming enough. Fortunately, the flavor is much less in your face. It’s still syrupy with very sweet char-like flavor. Otherwise, Matt brewing does a good job filtering the crap out of this beer making it relatively unfelt going down. Low bitterness and a reduced carbonation.
12 oz bottle, no date, St Paul tulip/snifter glass.

12 oz bottle-pours a thin light tan head and deep red/mahogany color. Aroma is mild sweet medium malt. Taste is dark malt-caramel/molasses/licorice, dark fruit, secondary wood/spicy hops. OK carbonation.

Smell is very sweet, like hardtack candy soaked in alcohol. Perhaps a little alarming! .Nice darkish color, and barely any head. Taste is a little coarse, like a bock usually is. The alky impact is readily apparent. Nice taste tho, with its slightly syrupy feel. Medium low carbonation, could use a tad more. It has a feel like alky was added after brewing. Perhaps even a malt liqour attribute after a few sips. A little more than my girlie taste buds can appreciate. Cannot measure up to Atwater Voodoo Vator Doppelbock or troegenator. Better than Victory St. Victorious Doppelbock and Sam Adams Dopelbock. On par with other typical doubles; Penn Penndemonium and Erie Fallenbock. Just a little too overwhelming for me.

A doublebock not unlike the Poor Henry's doubleblock. The bottled Dock Stree Illuminator that I'm sampling may well be the exact same beer that I sampled on tap at the now defunct Poor Henry's brewpub. Rich toffeeish flavor. Warming. Some sharp or astringent properties detract from drinkability.
