First brewed back in 2004, Curieux was our initial foray into barrel aging. To make Curieux, we take our Tripel and let it age in bourbon barrels for six-to-eight weeks. Once that time is up, we take the beer out of our cold cellars and blend it back with a portion of fresh Tripel. The resulting rich, golden ale features smooth notes of coconut, vanilla, and a hint of bourbon.

Bourbon-matured beer since 2004, tasted in the later version of 11% ABV. Regular, off-white, not very stable head, colour clear orange blonde. Interesting aroma of pineapple, honey, white grapes, cider, banana, pepper and obvious but not overpowering bourbon. Soft fruity taste with mild carbonation, bit vinous, some candi sugar, sweetish caramel malts, spicy and woody accents, finish warm alcohol (generating a dryish effect) and aromatic hops, but the sweetness from the onset also lingers. Closer to a Belgian-style barley wine than a real triple.

I would have guessed wine barrels instead of bourbon. Soft, slippery body of a tripel, hazy golden wth full fluffy head. Barrel aging takes over the flavor, adding some sour flavors to the mix. Normal tripel spiciness, floral essences. A tipel with a twist.

Clear golden colour, white head. Malty aroma, light hops, hint of vanilla, caramel, yeast. Malty flavour, light citrus, yeast. Light boozy finish, caramel, yeast. Rather nice brew.

@ Cantillon Quintessence. Orange amber beer, white head. Medium carbonation. Very complex tripel. Aroma is fruity with vanilla, banana and bourbon. Sweet, light bitter aftertaste. Well balanced.

75 cl. bottle sampled @ Cantillon Quintessence 2014. Orange with a creamy white head. Nose smells heavily of brett, olives, thick soy sauce, fish guts and grains, all over the place to say the least. Taste sweet upfront, sugary with malts, leading into brett, fish guts, sweet vanilla, alcoholic and woody. Body is quite nice, creamy, yeasty with nice carbonation but the beer is all over the place to say the very least. The more I drank of it the less I liked it and a lot of the flavours were a real mismatch of everything.

Bottle - Honey, grass and some wheat. Cloudy gold with a thin head. Herbal, honey and some pale malt sweetness. The barrel is soft as us the yeast profile.
