We brewed this ale with the famous sake yeast No 7 from Masumi Sake in Nagano, Japan. On advise from Masumi’s master brewers, we fermented this ale very slowly at low temperatures to bring out No 7’s fabulously fruity character. This product is unfiltered and unpasteurized. Please enjoy chilled! Special thanks to Masumi!

[From my backlog, tasted @ Cimmeria and shared with David Lowenbrau]. Coppery colour with a minimal and quickly diminishing off-white head. Aroma has notes of toasted malts, some molasses, caramel, sweet white wine. Flavor is slightly sweet, with some sour notes, toasted sugar, slightly alcoholic very good hidden by a mild bitterness, notes of molasses.Mild sweet final, not cloying with honey traces and light bitterness.

4oz pour at Churchkey’s Nogne O Tap Takeover. Pours a hazy, caramel amber with a ring of white head. Nose has a lot of caramel, orange, some drying wood pile, caramelized root veg, a little leafy too. Flavor has a lot of barley, heavy corn, whiskey, brandy, raisin. Distinctly starchy. Slick, oily finish. Not my thing.

Draft at Churchkey for meet the brewer event. Poured a clear ruby color without much of a head - though I was drinking off a drink that was poured a while before I showed up. Aroma is boozy, barley wine sweetness. Some light yeast notes. Flavor was booze, light alcohol burn, yeast character reminiscent of sake. Toffee, caramel.

Bottle at home. Has a slightly hazy orange brown colour with a small, ivory head. A complex and sweet aroma with tones of oak, dried fruit, smoked meat, leather and some alcohol, hops and wild berries. The flavour is also rich and more sweet. I find brown sugar, leather, wood, warming alcohol and some fennel, Madeira and roasted malt. Has a rich and sticky mouth feel, and a medium bitterness. A powerful and complex beer, and is really one of a kind.

On tap @ Setka Pub, Poznań. Pours hazy dark copper brown with small off-white head. Complex aroma of fruit, malt, caramel and hops. Sweetish, fruity flavour, with malty and caramellish notes, and bittersweet presence of alcohol. Lingering aftertaste of oaken barrels and fruit. Good.

Bottle from Bottle park, Bratislava. hazy brown color with minimal white head. Aroma of malt, red fruits, citrus hops, sake, wood. Malt, honey, grapes, Sake in taste . Alcohol is strongly present. Tasty beer.

Bottled 250ml@VWPBF Clear amber color, small white head. Berries, fresh wood in the nose. Medium to full bodied. Quite sweet, fruity notes, sugary. Too sweet and straightforward.

Appearance: Amber colour with no head.
Aroma: Rice, raisin, fruit, malt, alcohol.
Body: Medium body, flat carbonation.
Flavour: Sweet sake, rice, caramel, malt, alcohol.

Bouteille à @ 4de Gents Bierfestival. De couleur ambre laissant un léger filament doré sur le verre. Arôme est malté avec un bouquet caramel prenant. Un houblonné léger se dégage et ponctue le bouquet par qcq notes de pin qui s’entremêle avec un côté plus liquoreux - résineux. Palais présente malgré ses 13% une certaine complexité. La bière reste aisée à boire quoique complexe et idéale à partager. Le tout est épais sur une pointe sucrée et légèrement fumée alternée par une présence houblonné qui parvient à se créer une place dans ce labyrinthe. Le tout rappelle un jeune barley wine.

Appearance: Cloudy brownish color with a white head that ends up in a thin white layer.
Aroma: Sweet berry fruity, malty and bubblegum. Some yeast also.
Palate: Medium to full body. Sweet and a low bitterness. Soft carbonation.
Taste: Fruity (on the plum side), malty and some yeast. Sake I guess. Well hidden alcohol, although a bit warming.
Overall impression: Nice evening sipper!
