La Bonne Espérance, bière "d’Abbaye" (8,5 % Abv) est depuis janvier 2015 brassée par la Binchoise (elle était brassée par la brasserie Lefebvre auparavant). Sa spécificité notable, elle la doit à son procédé de fabrication, avec une ébullition à feu nu, les flammes du feu au charbon s’appliquant directement aux parois des cuves en cuivre. Ce procédé permettrait d’obtenir la teinte cuivrée de la bière. Si on y ajoute une légère opacité des bulles de diamètre moyen et une mousse d’environ 0,5 cm nappant notre breuvage, nous obtenons une bière qui visuellement sait se faire respecter. Le nez est particulièrement riche est intéressant. L’utilisation de sucre candi permet d’obtenir des flaveurs d’abricots et de fruits confits. Le tout sur une base de malt et une légère fraîcheur citronnée. A l’attaque, la Bonne Espérance est souple, les arômes principaux sont ceux du malt et du miel, mais la présence déjà détectable, en arrière bouche, d’une pointe d’amertume permet de les alléger. La deuxième attaque se porte alors de façon plus marquée sur l’amertume, belle, profonde, avec des notes marquées d’oranges confites et d’épices. Le final, quant à lui, sur une belle longueur, se recentre sur les arômes de miel et laisse dévoiler davantage l’alcool. Son côté rustique, soutenu par sa corpulence et un bel équilibre des saveurs, est de surcroit des plus très agréable et vous fera apprécier tout particulièrement cette bière sur un brie bien affiné.

Botella 33 cl tomada en el Lupulo Junio 2011. (r200). Fcpref 06..01..2012. Blonde cuivree. Cuerpo medio suave de 7.8 vol. Maltas algo dulces. Normal.

330ml bottle from Beers of Europe, drunk from my grandfather’s pewter tankard, so the colour is hard to judge! Looked nice coming out of the bottle. Golden. Aromas of spiced bread, yeast. Taste is light sweet, faint spice. Clean finish.

Bottle. cloudy orange, offwhite foam. Spicy orangepeel. Medium full, foamy mouthfeel. citric, light hayish malt, spicy finish.

Bottle @ home. Golden colour, white foam. Lively carbonation. Fruity with malty notes. Sweet, light bitter hoppy finish. Decent tripel, nothing exceptional.

Tasted as Abbaye de Bonne-Espérance and yesterday as Abbaye de Gembloux from a 75 cl bottle. Moussy, regular, cream white, stable head over a deep amber beer with brownish hue, clear at first but hazy with deposit, relatively strong fizz. Estery aroma of peach, apricot, melon, banana, orange peel, pineapple in syrup, butterscotch, bourbon, grass. Sweetish fruity onset, red apple, exotic fruits and stone fruit, honeyish sweetness in the background, sharpish and minerally carbonation, full caramelly malts with nutty touch, yeasty and leafy hop bitter finish with some ’jenever’-like warming alcohol. Nice balance between sweet and bitter, and in that respect a very decent tripel.

Pours slightly hazy golden with a huge off-white head. Aroma has notes of malt, yeast, dried fruits and hint of alcohol. Taste is medium sweet and light to medium bitter with a long warm, yeasty and fruity finish. Body is medium to full, texture is oily, carbonation is soft.

Donker geel bier met veel schuim. Smaak is hoppig bitter en fruitig zuur, koriander, kaneel. Blijft lang hangen. Uitstekende tripel.
