When our old friends Toshi Ishii and Bryan Baird approached us about brewing something special for Japan relief efforts, we of course jumped at the opportunity. We created this very special IPA, brewed with 100% Maris Otter Malt and Belgian candi sugar. Once we decided to tie it all together with the addition of Japanese Sencha green tea in a dry hop, the rest of the recipe came together easily. We included hops that we believed would blend well with the tea flavors, and we went non-traditional, at least in the sense of American IPAs. After bittering with Warrior hops, we used Crystal and New Zealand Pacifica for flavor. And then for the first dry hop, we again used Crystal and Pacifica, and added a brand new hop variety, Aramis, from the Alsace region of France. Then we went all Japanese for the second dry-hop, with Sorachi Ace whole leaf hops, and the Sencha tea. It’s always fun to use new ingredients and new hop varieties, and for that, I say to Toshi and Bryan: “Domo arigato!”

From the 11/2011 3R6P tasting. +++Sampled from a 12 oz brown bottle this beer poured a very murky apricot color with a trace white head that faded quickly and left no lacing. The aroma was tart orange, lemon, bread and kiwi. The flavor was bitter with tangy and sour nut, peach pits, citrus, tea and pepper. The finish was incredibly long and very bitter with sourdough bread and pepper notes. Fairly full bodied. Odd.

Outstanding. One of the best IPAs I’ve encountered. Pours a nice, hazy, golden-orange, almost peach color with a nice mid-sized head. Strong grassy, hop aroma. Flavor has a nice bitterness, with citrus and strong pine-hop flavors showing through.Very fruity. Nice smooth finish to it. One of the best collaborations from Stone and among their best IPAs in general.

Dean Swift - RBESG Tasting. Clear gold beer, residual white head. Light hoppy nose. Light semi crisp palate. Mild but rich hops, grassy with some marmalade. A little creamy malt with a touch of green tea. Finishes semi dry with a mildly bitter aftertaste. Interesting - I want a whole bottle to myself.

Tea and orange peel nose. Cloudy amber, chunky, thin head. Apricot and orange flavor, slightly resinous. Papaya finish.Lacks the house flavor of Stone, but still good stuff.

Bottle. Amber beer with an off-white head. Grapefruit and light pine aroma. Grapefruit and pine flavor with light tea. Medium bodied. Good bitterness. Grapefruit and pine lingers with light tea and some light frutiiness.

Dicht hopfiger Antrunk mit Gemüsenoten. Der Tee wirkt auch darüber hinaus interessant und überraschend voll, wenig trocken, erstaunlich wenig Alkohol. Dann karamellmalzig mit einer knackigen, gut versteckten Bitterkeit. 12/11/12/11//12

Draught @ Moeder Lambic during the Stone vs Moeder Lambic event. Golden yellow colour with a white head. Smells quite awesome. Nice and hoppy. Tastes hoppy and citrus. Quite good, i liked it. Great carbo, medium body.

Draught at Chez Moeder Lambic Fontainas during the three day Stone Event, 16-18 september 2011. Slightly hazy yellow color, vast creamy white head. Smell fresh, indeed green tea, hops and bitter. Taste green tea as well (very nicely done!), bitter and hops. You don’t taste the 9,2%ABV. Good carbo, full body.

Bottle. Pours gold with a white head. Nose/taste of green tea, tropical fruit, caramel malt, resinous hops and pine. Solid tea and malt body. Finishes with tropical fruit and a little warming alcohol.

Draught at Moeder Lambic, Brussels, for the Stone beer festival. Sampled on September 16, 2011Cloudy orange color, big yellow to tan head. Sweet, hoppy, citrus, cheeze scent. Big, sweet, spicy, yeast, dry taste. Spicy and bitter aftertaste. Smooth mouthfeel, high bitterness.
