We are not the harbingers of truth as some may suggest but it may indeed be argued that our brewing philosophy is tantamount to a dessert with a bellicose past. How, you may ask, would a brewery determine a likeness to hard-coated custard? Our response is simple; it’s all in the power of history, and of course, the extra finesse needed to top off a contentious treat with definition.

Bottled. A deep red beer with a lazing beige head. The aroma has notes of caramel covered liquorice candy and chocolate. The flavor is sweet with notes of malt, chocolate, caramel covered liquorice, alcohol, and coconut.

Draught. Creamy off-white good mostly lasting head. Black colour. Heavy toffee creme brule aroma. Heavy bitter light sweet toffee/caramel flavor. Some roast notes. Long finish. Creamy palate. Weird stufff.

Tap at Cockney Pub. Nice head with good duration. Color is black. Aroma and taste are very sweet cookie, dessert, milk, pudding, but also some roast malt and chocolate. Very sweet and beer is very true to its name, but a little too experimental for me.

Tap @ CockneyPub. Black with medium creamy beige head. Flavour is roasted malt, coffee, chocolate, bailey and nougat.

One of the best smelling stouts that I’ve had ever!! The taste is smooth and creamy. Tastes exactly like the dessert I had in Spain many years ago. I’m glad I was able to share this one with a buddy of mine before a Red Sox game at Fenway Park. I only had a 8 oz glass, so I’m not sure how it would be after several glasses. MAYBE a bit much, I would try again to make sure.

Bottle. Pours black with tan head. Nose is strong Boston Cream Pie and vanilla. Taste is creme brulee, chocolate, vanilla bean and sweet chocolate.

On tap at the Brick Store Pub. Pours pitch black with a large tan head. The aroma is sweet toffee, caramel, and roasted malts. The flavor is overwhelming sweet with a bitter aftertaste. It has a medium body, with a candy-like, malty mouthfeel. A wonderfully flavored beer, very aptly named.

Forth Southern Tier beer at the LCBO, and always welcomed. Wow... 10% ABV and a bigger bottle than there other 3 brews I have had so far. The nose is blasting with butterscotch pudding and some notes of vanilla. Hyper sweet aromas overall. I smell hints of walnuts too. The beer is black with small amounts of red highlights. Its head is beige, bubbly, creamy, not too big (because of the amount of alcohol) but quite decent, with good retention and patchy lacing. Not too thick of a mouthfeel, but has a little stickiness to it. Alcohol is present, but no burn, just tasting it in the aftertaste (mixed with the bitterness of the hop). The taste is sweet as well but the vanilla tones it down. Burnt malt, toffee, caramel and coffee. Quite an interesting desert Imperial Stout.

Medium darker cream-coloured head over pitch black beer. Wow. It DOES exactly smell like crème brulée, vanilla. This is effectively amazing. Vanilla, wood, roasted/burnt/scorched sugar, sweet eggs, some coffee liqueur - soit, crème brulée. Slick, slightly syrupy, bit aggressive MF. I don’t like coffee. I drink coffee stouts as water, completely happily. I don’t like crème brulée. I expected to take to this as to... well, beer. Alas. I don’t. But I’m in a minority, here, I’m well aware - I was at the tasting!

Bottle. What can I say, a bizarre beer. Not a normal Imperial Stout, that is one thing that is certain. It was very sweet, lika a liquid dessert. Still quite drinkable, but it is an advantage if you like sweets. One small glas was enough.
