However Improbable was brewed back in the Autumn of 2017 where, after fermentation, the whole brew was recirculated on coconut pieces for three days before it was racked into freshly spent Darkstar November barrels.
We left things to round out for a few months before racking the aged liquid out of the DSN barrels and then re-racking into fresh, first-use bourbon barrels with a full pound of fruity, floral Tahitian vanilla beans in each barrel.
We pulled the beer out of its second barrel slumber, then recirculated the brew through a hopback chock-full of fresh coconut. Five days later, we dumped the fresh coconut and swapped in a full load of toasted coconut and ran the beer through for another four days ...you know, for science.

Brownish black, thick, gluggy. Smells lotsa bourbon, heavy, then coconut but subdued. Thick, creamy, decadent mouthfeel, but quite boozy. Taste is sweet first, followed by salty roast, bourbon, ending on sweet coconut. Complex, very rich, and damn tasty.
