Swell is a dark beer brewed specifically for barrel-aging, the recipe developed to hold the flavours from the casks without being overwhelmed. It’s rich, fruity and full of flavour. It has spent 11 months in a combination of casks from the Spirit of Yorkshire, each of which had previously held maturing spirit from the distillery, including a PX (Pedro Ximenez) cask which is extremely rare in the world of barrel-aging, as well as an STR cask (red wine cask which has been shaved, toasted and recharred to really enhance flavour and maturation). The bourbon casks were all from Distillery Projects 003. Swell is the first in the Ebb and Flow series.

12/7/2023. Bottle shared by danlo, cheers Ed! Pours clear dark amber bronze with a small bubbly off-white head. Aroma is woody, winey, dates, prunes, toffee, boozy raisins. Moderate sweetness and medium bitterness. Medium body, soft carbonation. Drying finish. Developed really well. Great depth. Best ever by Wold Top!

330ml bottle from Wold Top. Dark brown amber colour, tan foam head and aroma of vanilla, wood barrel, oak, spiced, fruity. Taste is sweet, rich malty, dried fruits, caramel, whisky barrel notes, vanilla, oaky, fruit cake, raisins, boozy, with drying bitterness. Medium bodied, soft carbonation, dry malty bitter finish with lingering vanilla. Nicely drinkable.

330ml bottle from Brewer - Deep cola black body, short lasting white head. Nose is a boozy hit of whisky, dark fruits, hints of vanilla and some sweet spiciness. Mouthfeel is lovely and oily as expected, sweetness hides the punch, dates, booze, dark cake fruit, prunes... a lot going on. Good work.
