La Ruche is a delicate Missouri Saison fermented using a blend of our local microflora and a traditional Saison yeast. Orange Blossom honey was added to this soft beer for refermentation in a Missouri Oak Foedre and was aged to maturity before being naturally conditioned in the bottle.

750 ml bottle, blend 1, shared by Werckmeister, thanks! Golden, moderate hazy body, with a big, fluffy, off-white head. Aroma of straw, dough, citrus, moderate barnyard, some almond, some grapes, slight apples. Tastes quite similar, with moderate vinegar. Medium, slick mouthfeel, with an average carbonation. Finishes smooth, moderate sweet, a bit sour, a bit dry, moderate wooden, citric, with grapes, almond, apples. Very tasty. Extremely well balanced, just enough sweetness, sourness and rustic notes. Drinks so clean and fresh, with beautiful fruits. Outstanding Saison. Score: 8 / 4 / 8 / 4 / 17

Bottle shared at Lucky Bamboo share. Pours a clearish straw color with a finger of white foam that lingers. Lovely nose with pear, citrus, water chestnut and notes of grass, wet hay and floral notes. Floral honey notes on the palate with pepper, spelt, light yogurt acidity. Smooth and soft on the palate, but with nice carbonation. Has depth and a beautiful balance. Finishes with more floral honey, wet hay and peppery grassy notes.

Batch #2 on draft at the Cellar. Honey really mellows the wild Side Project wildness and tartness. Can taste the slightly herbal and sweet covering up traditional funk and tartness. A needed break from the typical SP beers. 838317
