La Ruche is a delicate Missouri Saison fermented using a blend of our local microflora and a traditional Saison yeast. Orange Blossom honey was added to this soft beer for refermentation in a Missouri Oak Foedre and was aged to maturity before being naturally conditioned in the bottle.

750mL bottle, pours a cloudy blonde with a small white head. Aroma brings out bretty yeast, with light oak and gentle acidity. Flavour is soft, with wild yeast, oak, and medium acidity. Low carbonation - easy drinking stuff. Really good.

Bottle, by way of a trade with b3shine. Cheers Beau. Dirty gold. Lightly opaque. No head. Nose has rennet. Soft cheese rind. Sawn green wood. Some nicely floral, orange blossom like, honey notes. Some dried apricot and peach. Taste is tart, crisp, lightly sour, and a little dry. Bright mouthfeel. Softly acidic. Dry, tart, and lightly acidic finish. Very nice. The honey is evident throughout, and provides a nice balance with the tartness.
