NOTE : this entry is only for beer served at the Night of the Great Thirst 2015.

A new experiment, started early June 2015. We picked up a tank of fermented ghostly saison and added it to 3 barrels :
1. freshly emptied chardonnay barrel : 80% saison + 20% Bokkereyder lambic
2. freshly emptied grape lambic barrel : 90% saison + 5% grape lambic + 5% lambic
3. freshly emptied solera gueuze barrel : 90% saison + 5% solera lambic + 5% lambic

Fermenting non stop since we added the lambic to the barrels, slowly fermenting all the sugars from the saison. Tart, dry, spicy, floral, herbal.

The beer served at the Night of the Great Thirst is a 50/50 blend of barrel 2 and 3.
