This was rumored to be the famed collaboration Isabelle Proximus aged on Cabernet Franc grapes. Despite this speculation, it's more likely that the base beer was aged in Isabelle Proximus barrels. This was originally intended to be a re-brew of Veritas 005, with a more readily-available type of grape, though it didn't quite work out, and this ended up as Veritas 007 instead of a re-release of Veritas 005.

750mL bottle, pours a cloudy golden with a small white head. Aroma is very complex, with loads of oak, lots of funk, and tart stone fruits. Flavour is amazingly complex, with tart peaches, oak, wood, and some vinous notes. Low acidity and medium vinegariness. Elegant and highly complex. Wonderful stuff.

This beer pours a slightly murky reddish-amber color with a medium thin white head that dissipates steadily to a wispy film. Short strings of lacing on the glass. Vinous aroma with yeast, oak and malt notes. Medium body with flavors of vinous oak, herbal yeast, red grapes and earthy malt. The finish is tart grape and oak. Good beer all around.
