A Botanical Saison w/ Heather, Lavender, Chamomile & Dandelion

The intro to our 10th Anniversary rewind - and perhaps one of our most formative brews - is a botanical saison dubbed “of Love & Regret”. The first batch was produced in the small town of Beerzel, Belgium in 2010.
Meant to evoke the delicate aromas of Spring, this beer was a tribute to the changing nature of the seasons, during what was a rather
transformative season in Brian’s own life. This was the first beer we crafted overseas - the experience of which would shape the model we would follow for years to come - eventually leading to the production of Stillwater beers & collaborations in over 30 countries.
Soft malts, herbaceous hops, & fragrant botanicals come together in an elegant ode to the bittersweet passage of time.

12 ounce bottle into tulip glass, bottled on 4/16/2014. Pours moderately hazy/cloudy bright gold color with a small dense white head with decent retention, that reduces to a ring of lacing. Slight spotty lacing clings on the glass, with some light streaming carbonation. Aromas of big lemon, pear, apple, white grape, light banana, lavender, chamomile, clove, black pepper, herbal, straw, grass, bread, and herbal/yeast earthiness. Very nice aromas with good balance and complexity of fruity/spicy yeast, herbal spices, and pale malt notes; with good strength. Taste of lemon, pear, apple, white grape, light banana, lavender, chamomile, clove, black pepper, herbal, straw, grass, bread, and herbal/yeast earthiness. Fair amount of herbal/yeast spiciness on the finish; with lingering notes of lemon, pear, apple, white grape, light banana, lavender, chamomile, clove, black pepper, herbal straw, grass, bread, and herbal/yeast earthiness on the finish for a good bit. Very nice complexity and robustness of fruity/spicy yeast, herbal spices, and pale malt flavors; with a great malt/yeast/spice balance and zero cloying flavors after the finish. Medium carbonation and body; with a smooth, crisp, and slightly herbal/bready mouthfeel that is nice. Alcohol is well hidden with minimal warming present after the finish. Overall this is a very good herbal spiced saison. All around well balanced and robust fruity/spicy yeast, herbal spices, and pale malt flavors; and very smooth and crisp to drink. A nicely enjoyable offering.

Bottle 750ml (bierkompass)
Murky amber color, steady beige head. Lots of herbs in the nose - heather is evident also clove-like aromas. Medium-bodied. Very herbal with some caramalt in the background, some tartness then lots of herbs. I am not fan of herb beers.

Pours hazy medium brown color with tan head. Very floral aroma with heather, lavender and chamomile with some grassy hops. Fruit and spice flavor that is very flowery. Medium body with average carbonation. Strange but enjoyable.

Bottle at Café Demervallei. Dark brown-orange, lace, cloudy. Very spicy nose, pumpkins, fruits, some citrus and brown sugar. Spicy, sweet flavor, cake and citrus. Strange and over-spiced.

Slightly hazy deep copper and amber coloured body with a nice one centimetre tall tan head. Aroma of bright flowers, lavender (huge), curacao, hay, wheat and a hint of white pepper with a lot of yeast and a touch of hops. Medium-bodied; Assertive floral flavours with the lavender really hitting hard and heavy, some light wheat, a hit of yeast, a little grassiness and a bit of sugars at the end. Aftertaste shows a well rounded flavour with the flowers dominating, but the wheat balanced with the hops and a touch of sweetness for good measure. Overall, a nice and complex herb-based saison/belgie with a good sweetness. I sampled this 33 cL bottle purchased from Arrowine in Arlington, Virginia on 19-July-2013 sampled at home in Washington on 15-September-2013.
