A Botanical Saison w/ Heather, Lavender, Chamomile & Dandelion
7.2% ABV
-
The intro to our 10th Anniversary rewind - and perhaps one of our most formative brews - is a botanical saison dubbed “of Love & Regret”. The first batch was produced in the small town of Beerzel, Belgium in 2010.
Meant to evoke the delicate aromas of Spring, this beer was a tribute to the changing nature of the seasons, during what was a rather
transformative season in Brian’s own life. This was the first beer we crafted overseas - the experience of which would shape the model we would follow for years to come - eventually leading to the production of Stillwater beers & collaborations in over 30 countries.
Soft malts, herbaceous hops, & fragrant botanicals come together in an elegant ode to the bittersweet passage of time.

11.2oz bottle at Brasserie V. Kind of a gusher, big soapy head, bronze-orange body, looks unfiltered. Obviously Stillwater excels at high ABV Saisonish beers, and his is no exception. Effervescent carbonation. light and fluffy body. Lots of herbal tones, perfume, tea notes. Lemon-lime, pear. Very unique, somewhere between a Saison and a tweaked out herb bomb. Dry and quite zesty, very refreshing, with some mellow, fruity ginger in the finish. Unique edges. Complex but easy.

Pour is a murky brown with a average white head. Aroma is sweet and herbal with a lot of fruity yeast. Flavor is candi sugar with some herbal tea and I do get a bit of lavender. Finish is some caramel malt and wild honey. This was different with all the botanicals, there is probably a lot more in here than I can detect, but still very tasty.

12 oz tulip draft pour at Bier Station in Kansas City, Missouri. The pour is a hazed orange copper with a well formed one inch tan head. The aroma is big lavender floral, layered on top of straw, herbal and tasted malt. As the beer warms, a light pepper becomes evident. The taste is mostly about the floral - lavender and chamomile are dominant. The herbal straw toasted malt provides a decent foundation, that the lavender is really the story on this one. The palate is medium bodied, soft carbonation and a lingering floral lavender finish. This one didn’t entirely do it for me, though it was well made.

Bottle: Poured a light hazy amber color ale with a large foamy head with good retention and some lacing. Aroma consists of candy ester with light soapy notes with light sweet notes. Taste is a pretty good mix between some soapy notes with good candy-like ester notes with light residual sugar and light dry malt aftertaste. Body is fuller then average with good carbonation. This particular bottle may be a bit tired but very nice nonetheless.

33 cl bottle @ hotel room, Las Vegas
Aroma is somewhat spicy and slightly sour with earthy notes and hints of apples. Flavour has peppery spices and hints of ash. Palate is too high on CO2. A bit too much on the spicy side, but not bad anyway.

Pours deep gold into a tulip. Off-white micro head actively dances and crackles as it recedes at a medium pace leaving no lacing. Sweet meadow and grass aromas. Crisp with sweet caramel and yeast upfront turning to lavender in the lasting flowery finish.

11.2 oz. bottle, pours a dark orange amber with a large, but quickly dissipating, frothy off-white head. Aroma of dandelion and heather upfront, definitely quite spice heavy, with yeast, and some lingering banana. Flavour of banana, dandelion, heather and lavender, more banana, yeast, and floral notes. Despite the high carbonation, it drinks rather soft with lingering banana-like notes. Solid attempt.

Sample at Ale Wine & Spirits in Powell on 01/20/2012. This beer is a hazy ruby-amber color with a medium fluffy khaki head that diminishes slowly. Small sticky patches of lacing on the glass. Herbs, yeast and doughy malt in the nose. Medium body with flavors of yeast, floral hops and herbs/flowers. The finish is sweet with a honey and yeast aftertaste. Decent overall.

Bottled. Hazy bronze colour, lively head. Heavy herbak aroma. Sweet with clean, spritzy mouthfeel and medium body. So much herbal flavours it hides everything else. Low bitterness.
