This is a mixed-fermentation (sacc, brett, lacto) saison that was barrel aged in both large (600L) and small (220L) format barrels. Blended to be the saison of our dreams: light, lemony-lime tart Goldilocks acidity (just right), with a herbaceous coconut wink at the finish - we love it.

Tasting at Brian's, bottle
Cloudy pale blond colour. Mild funk and lemon aroma. Dry and moderately sour, a bit fizzy, lemony, and funky.

375mL bottle, pours a cloudy blonde with a small white head. Aroma brings out wild yeast, rustic saison yeast, and a little hay. Flavour is more tart, with rustic saison yeast, wild yeast, a touch of tart citrus, and light hay. Complex and nicely expressive of the wild yeast. Good acidity and balance. Excellent.

375ml at Brian's. Appearance: hazy blonde with a white head. Aroma: nice farmhouse and barrel notes. Taste: alomg the same lines. Overall: pretty good.

Cloudy pale yellow with a decent white head. Stone fruit and funk. Light soured lemon and a touch of funk.

Beer bottle looks good, all sweaty and full as I sit on the cottage dock, also sweaty, but in an entirely different and less pleasant way. Not planning on sticking my nose at the tip of the bottle, I'll go right to the sipping. Oh it's good. Mildly unripe grape sour, not overwhelming, and it lingers. Mild vanilla, with overall vinous feel. Quite tasty.
