A golden sour brewed in the fall of 2018, then transferred into our outdoor coolship, where it cooled overnight in open air while capturing ambient microflora. The following morning, the inoculated beer was transferred into a selection of French oak wine barrels to spontaneously ferment. After a year and a half of monitoring and tasting, we selected a few barrels to blend before refermenting with Stevnsbær cherry from Frederiksdal Winery in Denmark. Bottle conditioned with champagne yeast. Please keep cool, pour carefully and expect some sediment

Deep clearish copper red with a small beige head. Nice soured cherry. Soured sweet cherry with a light finish. Decent but a bit boring.

Draught, taster. @MBCC 2021, Copenhagen (Denmark). 22/10/2021 [#4.429 Global - #534 United States of America - #1 Homes Brewery (My Brewery #205 from the States)] Deep red colour with a pinkish head. Oak wood, funk. Cherry tart. Next one please!

[10/22/2021] Sample at Mikkeller Beer Celebration Copenhagen 2021. Blue session. Deep red, pink head. Jammy cherries, funk, marzipan, sour, juicy. Great.

Draught @ MBCC 2021. Tart, slightly sourish and funky with some oaky cherries, wood and farmyardy earthiness. Okay, gets slightly vinegary near the end.
