For this latest limited release our brewers pushed the boat out by brewing an amber saison with a difference. The beer is the result of several fermentations across a different number of ex-pinot noir barrels. After fermentation the beers were then blended together to achieve the desired flavour profile. The beers were all fermented with different microbes: traditional saison yeast, two strains of Lactocacillus bacteria and two strains of brettanomyces, a wild yeast that is known for its unusual flavour contributions to some styles of Belgian beer. The brewer’s blend marries all of the different components to produce a beer that displays a tart fruitiness with distinct spice and funk from the wild yeasts. Little Red Riding Wood is a saison-based beer and as such finishes bone dry with a touch of oak tannin.

Tap at Harts. sushi-ginger and balsamico nose. Cloudy orange, offwhite head. Light bodied , dry, light peach, vanilla finish. A bit flat yeasty/tannin aftertaste
