Blonde sour aged in oak foeders with added guava.

There's an aura of mystery that occurs when we close the doors to our barrel room. No one can say for sure what happens each night but it's obvious there are spirits [ghosts if you will] working their magic. We're not sure how many inhabit our oak forest. At present there are five large foeders and more than 1200 oak barrels for them to hide in, around, and behind.

To this day, no one has managed to see one during the day but our night time brewers hear whispers and the sensation of unnerving drafts of wind arriving out of thin air. It's as if the ghosts want to be seen or at a minimum acknowledged. After 11 years, we felt it was time to give them their due.

Bottle. Yellowish color, unclear, white foam. Aroma: sour, complex, guava, bretts, berries, wild, unusual. Taste: sweetish-sour, guava, other tropical fruits, slightly sour, soft, good.

Bottle, at bottle share, thanks to me. Pours gold. Guava, sharp, lemon, little acetic, wood, little cherry. Medium body. Good.

Bottleshare: pours slightly hazy golden with a white head. Aroma is light guava notes, some light funk, wood. Taste is woody, sour, fruity. Some aftertaste. Quite good.

Bottle, 6%. Slightly hazy golden with small off-white head. Aroma is malt, fruit, hops, lemon, oak and stone fruit. Flavour is malt, fruit, lemon, citric, medium sweet, stone fruit, oak and a little dry.

Bottle at a friend's. Pours hazy golden orange, nose is brett funk, oak, guava, lime, taste is Similar, juicy, zesty, salty.

Bottle 37,5 cl. Pours an almost clear golden with a lacing, white head. Fatty, intense fruit aroma with acetic acid underneath, but it's downplayed and not overdone. Medium body, very fruity, very funky, lovely wooden impact with delicious oak notes. It's all very neatly balanced, fruity sweetness and funkty tartness. Delicious. 110319

12.7 oz corked and caged. Aroma is oaky, strawberry, guava. Pours hazy orange with a one finger bone-white head with decent retention and some chunks of sediment hanging out in the bottom. Taste is highly sour (8/10) and acidic, finishing dry. Lots of fruity flavors; guava comes through more in flavor than the aroma. Tasty, lip-smacking good.

(375ml bottle from boxbeers.dk) Pours lightly hazed dark gold with an average but stable white head and lace. Aroma has quite a hefty funk blanket that's got some wet mulchy/farty sulfur vibes, plenty of oak, nice sweet floral and musky guava, lime, cereals. Flavour is quite tangy tart with lemon-lime squeeze and a little white wine vinegar at the core, draped in solid but not overwhelming floral guava, earthy but less obvious funk than the nose, plenty of oak with leather and tannin, finishing dry but with lingering tart core and a clear oaky tannic edge that's almost bitter. Medium body with soft but mouth filling effervescence. Happy days, a well-carbed LA beer! Seriously though, this has a tart and American edge but nice complexity and a well-judged fruit addition.

375 c&c from Bine & Vine. Pours copper tinged gold with a transient white head. Tart woody/fruity aroma. Med body or a bit more. Flavor is tart fruit and astringent wood. Tart guava! Not what you'd pick up on the road verge in Hawaii. Not necessarily a beginning sour, but very approachable. The guava and wood sort of blend together over time, and it becomes ever more pleasing.
