While traditional spontaneous beers are fermented and aged in oak, we decided to ferment and age in a clay Amphora from Italy, one of the most ancient fermentation vessels known to man. This imparts a unique dry mineralogy unlike the tannins produced from wood. The OverWorks crew then referment the beer with white currants, and bottle without filtration.
The result defies expectation. OverWorks Spontaneity is a 6.0% ABV Scottish sour leading with a refreshingly sharp vinous note from the white currants, playing into the influence of the tannins. The dry, almost sharply puckering sourness comes into play on the finish, ending on a bright acidity and long, tart aftertaste. This is a beer of balance, born of history.

--Sample, thanks oh6gdx! -- Hazy deep golden, small head. Citric nose with white currant and lemon. Tart with medium body and rounded mouthfeel. Citric acid and tart berries, notes of grass. Low bitterness.

ABV: 6.0%. Hazy light to medium yellow colour with a small, fizzy, fair lacing, mostly diminishing, off-white and open head. Aroma is moderate malty, caramel - sweet malt, oxidide, sour - fermented sour, citrus, leather, fruit - berries - currant, vinous, apple - cider like. Flavor is moderate sweet and acidic with a average duration, oxidide, sour - tart, apple - berries - currant, grapes - currant, sour - fermented sour, vinous touch, dry. Body is light to medium, texture is watery, carbonation is soft. [20240323]

Bottle (Bottle 372/1593, from Alko Web). Hazy golden colour, small white head. Aroma is floral, tart, some acidic fruits and mild nectary tones. Flavour is acidic, really brutally tart fruits and wooden tones. Still very pleasant after the first shock is over.

Bottle 288/1593. Pours hazy yellow with a quickly dissipating white head. Aroma: bright, tangy, white wine vinous hints, lactic tang. Taste: dry, moderate acidic, lactic, white grape, sour plums Medium body with low carbonation. The Belgians have nothing to worry about with this supposedly Scottish lambic.

37,5 cl bottle @ VesaV. Bottle #1386. Batch #190048A, BBE 11.11.2024 Aroma has grapefruit and earthy notes. Feels like cantillon. Flavour is rather tart with milky notes, sour cream and bush leaves. Also citron. Unusual stuff.

50cl bottle - 200/1593. Intense sour beginning. Lots of horse blanket and acidity. Deep fruity sour, mild, wild yeasts, intense sourness, horse blanket with grape fruit in the aftertaste. Very interesting.

37.5cl bottle. A hazy light pale yellow beer with a white lacing. Aroma is funky, sour fruity, pale malt, grapes, brett. Taste of sour white grapes, yellow fruits, funky, dry. Nice!
