(swing top bottle) Clear, golden colour with a blond and dense foamy head. Moderately sweet pale malty aroma with notes of biscuits, honey, vanilla and a discreetly touch of barnyard/draff, accompanied by herbal hops in the background. Sweet flavour with a delicately rounded level of bitterness, medium bodied with a pleasantly matured carbonation. Biscuity malty taste with hints of honey and vanilla; balanced herbal and very subtle fruity hops turn in from the middle part, lingering into the sweet-bitter finish with a biscuity malty tail in the aftertaste. Sorella Doris – santo subito ! 04.XII.11

Old fashioned Būgelverschlußflasche: The bottle looks very good, because Schwester Doris (the only german nun-brewmaster!!!) is smiling on the consumer! Golden, clear, mid-sized lacy white head, moderate to solid rural and pale-malty nose, fruits, vanilla and herbal hops underneath; moderate sweet-bitter flavour, really soft, medium bodied; slightly increasing driness in the smooth lingering medical-hoppy and rural pale-malty finish. Very well balanced, extremely moreish Bock. Cheers to Sister Doris! I had to drink immediately a second bottle…

Bottled @ in de Wildeman. Clear golden color, short head. Aroma of sweet malt, hint of hop. Bit too sweet taste for a heller bock. Hint of honey? I loved the zoigl, but this one is a bit boring and too sweet.

Bottle 500ml. w. swing top @ home.Clear medium yellow color with a average to large, frothy, good lacing, mostly lasting, off-white to white head. Aroma is moderate malty, toasted, helle bock aroma, sugar, fruity ! Flavor is moderate to heavy sweet and bitter with a long duration, sweet malt, grainy, sugar, very bock alike flavor as well as the aroma. IMO a very good and easy heller bock, not to sweet and sticky as some of the others, will love to try this fresh from tap at brewery ;O) Body is medium, texture is oily to watery, carbonation is soft. Bottle looks simple, but good, the beer in the glass not too zippy, modest turbid, small head. Starts malty, not too strong, a bit spicy-grasy with flowery-hoppy notes. Finish well balanced, a bit sourish, not too strong. Could be a bit sweeter, but still a great bock!

Fresh cask at In de Wildeman. Clear golden colour, dense white head. Aroma of sweet bready malts, honey, some hay. Flavour is sweet, malty, honey, bread, light hoppy but noticeable bitter finish. Smooth, creamy and soft mouthfeel, medium to fullbodied. Very good and highly enjoyable.
