A simple mead can sometimes offer the most incredible depth. In this dessert mead we take Swedish raspberry blossom honey for a mellow fruity and summer blossom floral base, add a hint of Spanish orange blossom honey for some citrus higlights and then ferment with plenty of highly fruity and brightly acidic heritage raspberries. This makes for a deceivingly simple yet delicious raspberry melomel that never grows dull. Serve Sanguinius just below room temperature with some baked brie, a raspberry crumb pie or why not pretty much on its own with a handful of ripe summer raspberries and a good book about the grim darkness of the far future.

Pours a clear, dark red/amber. Scent is intense, raspberry jam, honey, tad ... phenolic? Seems a bit 'off' to me ( plastic comes to mind, but doesnt quite describe it ). Arteficial flavors sometimes come across like this, but I don't believe any arteficial flavors were used here. Perhaps due to the specific honey's i'm less familiar with? As it opens up, honey (floral, intense, natural) rises above the fruityness, but the sharp unnamed scent remains. Taste is full, juicy, fairly fullbodied, intense raspberry. Honey, natural and full, very intense, floral, and indeed again that character I had trouble describing in the scent, now surely pinpointed to the specific honey. Mild alcohol, gently overtaking the finish. Nice, fairly sweet mead. perhaps not my favorite honey character, but I can't day anything else than that it works, and it's a pleasure to drink.

Bottle at Zwanze. Clear red. Heavily sweet, with orange peel and red wine gums. Candy-like with quite a bit of burnt sugar. Wee bit overwhelming.
