Pastiche is a traditional style berliner weisse, brewed with Pilsner malt and raw wheat, and without the boil or any hop additions. Pastiche was then fermented with two strains of Brettanomyces from Escarpment Labs - B. Bruxellenis and B. Anomalus - both of which were cultured from old bottles of traditional German berliner weisse. In Germany, berliner weisse is typically served one of three ways: unadulterated, with raspberry syrup (himbeersirup), or with Woodruff syrup (waldmeistersirup).
We have two housemade syrup options: cranberry syrup, or dill syrup!

Pale, almost greenish colour. Ok, there’s some of the classic lacto, but then some uric acid notes – is that the B. anomalus? I’m not familiar with that one. That’s more on the nose. On the palate, it’s light, tart, a bit appley. Okay, that’s a funny character. I do wonder what the classic Berliners were – there were over 1000 of them so they would have varied quite a bit. Not my favourite take, but I am happy that they went there, because going old school Berliner is a lot of potential fun that the brewing community has left untapped, honestly.

On tap at House of Funk, pours a clear blonde, no head. Nose brings out some nice critters here, with plenty of wild yeast, and gentle tartness. Flavour is light-moderate tart, with lots of critters, some funk, soft wheat, and a little citrus. Love that they brewed this traditionally, without lacto or adjuncts. Really well-made.

Smells of sweet soda pop and vague grain, has a simple very pale straw body with little foam. Flavour is slight sour grain, bitter, gose notes. Mouthfeel is a little thin without much carbonation. Pretty boring, might work better with their added flavouring.

Draught at the brewery
Pale yellow colour, just hazy, no head. The acidity is quite sharp, the mouthfeel is dry, puckering, there is also a doughy note and it would be better if there wasn't any. Ok, but clumsy.
