The finest apples we harvest from our tall, old trees on Pender Island are often the last to ripen. Working with non-commercial orchards and homestead trees allows us to let these late-ripeners hang on the branches until the last possible moment, harvesting only after the crows and October windstorms have taken their share and the sugars are at their highest. This late season blend includes Baldwin, Golden Russet, Wagener and other heirloom varieties, as was as jonafree apples from Saturna island. To balance the intense acidity of these varieties we used traditional keeving methods to retain a moderate natural sweetness, resulting in a juicy-sharp, gently tannic, lower alcohol nectar.

Pale, dull appearance. Mellow body, good apple character. Dry and effervescent, soft, and drinkable. Solid.

FHF 2024. Appearance: hazy straw with no head. Aroma: dry, lots of bugs, fruity, lots of apple skins and seeds. Taste: along the same lines. Overall: very good.

750mL bottle, pours a clear golden with a medium white head. Nose reveals a lot of champagne-like effervescence, crisp apple skins, moderate funk, and gentle sweetness. Flavour is low-to-medium sweet, with lots of champagne-like effervescence, gentle funk, and crisp apple core. Crisp, gently sweet and nicely funky. Excellent.

Minimal foam on a muddy gold body, modest carbonation, earthy heaving farm apples on the nose, burlap and hay and barn but still sharp and sophisticated, excellent. Flavour is a muddy apple with more burlap, soft molasses, chewy rotting apple, ruddy citrus sweetness in all its glory. A great meld of sweet and funk that is fun to drink.
