We have brewed the change we have been waiting for!
Liberally hopped to an audacious degree, our Belgian Double IPA reaches across the aisle to bridge the seemingly contradictory brewing philosophies of the old world and new. Our beer uses generous portions of Pilsner and Vienna malts to give it its hazy golden color and rocky white head. Two independent dry hop additions of Simcoe, Chinook, Amarillo, Hallertauer, and Spalt put aside their differences to form a delicious coalition. Floral grassiness dominates the nose with fruity hints of bright citrus well represented. Its subtle spicy flavor comes from a Belgian yeast as well as generous doses of German hops in the kettle. These aggressive flavors are complemented by a determined bitterness and a full but dry finish.
All of these characteristics come together in a nonpartisan spirit of cooperation to form a beer that is both righteously flavorful and drinkable.

As ’Cambridge Audacity of Hops’. Hazy amber beer, tidy off white head. Palate is a little soft but with biting carbonation on the back end. Semi dry. Creamy malt with subtle caramel. A little aniseed. Hops are bitterish pine with a touch of fresh orange. Finishes creamy and dry. Mild bitterness in the aftertaste. Nice pine vibe here but a bit dry.

Bottle. Amber beer with a cream head. Grapefruit and yeast aroma with light spice and light pine. Grapefruit and pine flavor with yeast. Medium bodied. Good bitterness. Grapefruit and pine linger with yeast and backing malt.

Bottle. Pours a clear orange with small frothy off white head. The aroma is floral hops and pine. Thin mouthfeel with sweet hop and dry bitterness in the finish. Good.

Bottled. Clear amber color, short off-white head. Aroma of spicy belgian yeast, grassy hop, bit pine, hint of grapefruit. All quite soft, but decently balanced. In taste it’s quite dry and medium bitter, but the belgian yeast gives this crispy drying feel that doesnt match with the bitterness competely. Belgian yeast esters make it a bit more sharp and give a hint of alcohol as well and the bitterness is not carried by any creaminess. Choice of hops for the aroma seem to be much better in balance.

22oz bottle pours a clear orange with some thin, lacing, white head. Nose is big, pine tar, soap, grapefruit zest, sticky orange juice, kumquats, a little candy. Flavor is also big, fresh grapefruit zest, orange juice, loads more candy than the nose lets in, tropical fruits, kumquats, loads of sticky citrus, some light citrus bubblegum. Full, sweet, sticky finish.

Pours hazy, bright yellow-orange with a thin, off-white cap. Scent is sweet pine, resin. Taste is malty, fruity, acidic. Grapefruit peel, flowers, pineapple. Very mild Belgian yeast. Tasty indeed.

Bottled@vPBFII. Golden colour, small white head. Aroma is fruity, catpissy, citrus and some nice maltyness. Flavour is fruity, citrusy, mild sweet maltyness and some slight yeasty and spicy notes.

Aroma is fruity with pineapples and resin. Flavour is quite hoppy with resin, pineapples, mango and hints of gooseberry bush. Leathery palate. Not very Belgian – perhaps hints of Belgian toffee or fruits. DIPA is what this is anyway. And a nice one.

Bomber. Cloudy golden pour with a fizzy, off-white head, rapidly diminishing. Aroma of orange, citrus, toasted grain, grapefruit. Hints of mango and passion fruit. The flavor is moderately sweet and lightly to moderately bitter. It finishes lightly to moderately sweet and moderately bitter. Medium body, watery texture, lively carbonation. Taste of citrus and mango with light notes of funk. Clean and fresh. Nice beer.

Pours a nice, transparent yellow-gold. Medium cream-colored head. Mix of small and big bubbles. Nice enough. The aroma is an interesting mix of flavors. There’s a lot of hops. Quite juicy. Big pineapple and bright citrus with a twist of a floral, spicy noble hop aroma. That part is very nice. Belgian esters and simple malt sweetness round things out. The hops are so nice that I can almost overlook that the flavors don’t quite mesh. There’s also a bit of booze and a touch of acetone, but I’m still loving the hops. The taste has more grassy and spicy hop flavor and less tropical fruit and citrus. It’s not quite as gentle as I was hoping. Fair bit of pepper. A touch more booze. I hate to say it, but I get the feeling that the hop loveliness is hiding a not so great Belgian-style base. Mouthfeel is a bit prickly, and there’s a definite booziness right at the start of the finish. I like this beer, but I think I’d love it with a cleaner yeast. If they just brewed it as a standard DIPA, I’d probably be happier. That said, the hops are so bright and flavorful that it’s easy to see past the flaws.
