Real change is here! No longer will American beer lovers be forced to choose between those quirky, eccentric beers of Belgium or the explosively flavorful IPAs of the United States.
We have brewed the change we have been waiting for!
Liberally hopped to an audacious degree, our Belgian Double IPA reaches across the aisle to bridge the seemingly contradictory brewing philosophies of the old world and new. Our beer uses generous portions of Pilsner and Vienna malts to give it its hazy golden color and rocky white head. Two independent dry hop additions of Simcoe, Chinook, Amarillo, Hallertauer, and Spalt put aside their differences to form a delicious coalition. Floral grassiness dominates the nose with fruity hints of bright citrus well represented. Its subtle spicy flavor comes from a Belgian yeast as well as generous doses of German hops in the kettle. These aggressive flavors are complemented by a determined bitterness and a full but dry finish.
All of these characteristics come together in a nonpartisan spirit of cooperation to form a beer that is both righteously flavorful and drinkable.
Enjoy!

Bomber from The Davis Beer Shoppe as Cambridge Brewing Co. "The Audacity of Hops". Pours hazy copper/amber with a creamy off-white head. Aroma is a mix of evergreen and citrus. Strong aroma. Med body or better. Foamy carb. Flavor is a mix of fruit, resin, citrus with a detectable caramel backbone. I think I can get a hint of earthy/Belgian/yeast, but the hop is so strong Iβm not sure. Itβs very bitter and quickly builds up a a hop burn. Finishes dryish and quite bitter.

Bottle as CBC Audacity of Hops at 8%. Pours with a clear golden orange hue with a medium sized and retentive white head. Aromas are hoppy with grassy, mango, tangerine, earthy, rotten orange, some grainy malt, rough esters, light leather and black pepper. Flavors are soft and bready malt, light popcorn, medium sweet, quite bitter, grassy, tangerine peel, peppery phenol, mild bubblegum, eucalyptus. Lively carbonation, medium bodied warming. The bitterness and alcohol with the phenol comes across as hot.

Hazy golden with a lasting white head. Bright American hop aroma with perfumed peach, orange, tangerine and pineapple. Dry with lots of fruity hop flavour and notable bitterness. If there is any Belgian character here, itβs very well hidden...

Sampled under the name of Cambridge Brewing The Audacity of Hops CBC Belgian Style Double IPA, and following the label, itβs NOT brewed at Mayflower B.C., but at Mercury Brewing, Ipswich... Thick, creamy, yellow-cream coloured head over lively carbonated hazy orange beer. Intense hopsβ nose upon pouring, but also something roasted, even scorched. Quite dusty nose, too, as something forgotten for a loooong time. Bitter taste with citrusflavours, but the kind of citrus found in soft drinks. Bit metallic in the finish, slight CO2 sourishness, blending with the citrusstreak. Long metallic-bitter aftertaste, bit annoying. Medium bodied, very (hopoil) slick. Hops are there. Brewing date is june 2012, so all is well there too - yet it tastes as if its ingredients have been covered with dust since that CBC in β09.
