Over the course of our first year, an oak foeder in our cellar earned the name Aion. Aion is a predecessor for multiple releases and blends - past, present, and future - and has evolved into an entity of its own.
This unadulterated foeder ale is a culmination of our house cultures developing over the year - providing a unique harmony of acidity, aged complexity, and funk.

Pale, with a slight haze. No head. Toasty aroma, biscuity, and that'�s a lot of the palate, too. Some brett, light tartness, mellow stone fruit notes.

Poured from 473mL can (2022 vintage). Hazy gold with small white head. Nice light funk from the foeder, mild saison yeast, simple, but enjoyable.

750mL bottle, pours a hazy golden with a medium white head. Aroma is really nice, with lots of funky brett, wild bugginess, and a touch of rustic character. Flavour follows through with a nice funky character, some gentle citrus zest, an a rustic character. Really nice funky character. Not the most complex but it's really solid.

Clear effervescent yellow with a decent frothy white head. White grape and lemon notes. Tart lemon and white grape with a long grape like finish. Not bad.
