B.A.B.S III is a complex beast of a blend. To create an elegant and decadent stout, we love to blend it. Blending creates the opportunity for complexity, bringing both layers and length of flavour.
The original B.A.B.S was inspired by one of Firestone Walker’s Anniversary Beers and with each annual iteration of B.A.B.S, we have continued to create and improve the blend.
The x-factor of this year’s blend is that we’ve added two different sherry barrels that had looked after Yadokai for four years and then a year of holding some of B.A.B.S II which adds warming sherry notes to a delightfully rich, boozy and decadant beer.
The imperial stouts we have blended include a punchy 18% beast and another with an elegant balancing acidity. They contribute depth, balance and satisfying boozy character to this blend. The culmination is sublime, an amalgamation of four different stouts across a number of unique barrels.
MALT: Oats, Barley, Wheat
HOPS: Magnum, Comet
YEAST: House ale yeast, Local wild yeasts
OTHER: Cocoa nibs, Clifton Coffee

Bottle at ash's. Pours black, nose is chocolate, caramel, fudge, berries, taste is sweet toffee, chewy, funk,leather, fruity, chocolate.

Bottle picked up from Hoptimism website, Loughborough, Leicestershire UK, consumed at home Saturday 5th December 2020 having had Prawns, scallops & clams with tomato & feta for tea tonight, now watching Gone Girl on Netflix. Pours black with a mid sized light tan head. Some caramel, light sherry notes and roasted maltiness on the nose. Taste is just how an Imperial Stout of this standing should be, it's rich, smooth, decadent, indulgent and super nice. The barrel ageing gives a slight booziness, amongst the chocolate, dried Christmas cake fruits there is a slight fruity tang. Lovely.

Bottle. Black. Toffee and soft vinous notes in the aroma. Malty sweet flavor. Full bodied. Oak, soft roast, vanilla, vinous notes, toffee, raisin and a hint if sherry. There is some complexity next to the layers of sweetness.

bottle at home... Nov 2020... dark black... no head... wierd funk.. sour cherry... ohhh is L deep red wine tones.. massive red wine nose... soft sweet cherry chocolate.. light dark fruit... deep rich red wine... soft malts... its over red wine fkr me.. but interesting
