B.A.B.S III is a complex beast of a blend. To create an elegant and decadent stout, we love to blend it. Blending creates the opportunity for complexity, bringing both layers and length of flavour.

The original B.A.B.S was inspired by one of Firestone Walker’s Anniversary Beers and with each annual iteration of B.A.B.S, we have continued to create and improve the blend.

The x-factor of this year’s blend is that we’ve added two different sherry barrels that had looked after Yadokai for four years and then a year of holding some of B.A.B.S II which adds warming sherry notes to a delightfully rich, boozy and decadant beer.

The imperial stouts we have blended include a punchy 18% beast and another with an elegant balancing acidity. They contribute depth, balance and satisfying boozy character to this blend. The culmination is sublime, an amalgamation of four different stouts across a number of unique barrels.

330ml bottle from JB's Brewhouse in Jersey some 3 years ago and cellared since. Pours black with next to no head. Aromas & tastes of dry fruit, chocolate, coffee, sherry, bourbon, wood & roasted malt. Medium body. Dry finish. Strongest I've ever had, enjoyable but really not for me

Bottle at home, 26th April 2024, bought from Radbeer in November 2020, pours black and rather thin. Aroma is liquorice, Sherry, molasses and barrel. Taste is intense, barrel, molasses, Sherry and liquor, dark chocolate. Good complexity and decent stout

Well stored bottle. Deep amber body under a small beige head. Nice aroma, malt, dry fruit, red berries, toffee, vinous and hint of sour fruit. Taste is sweet, vinous, malt, toffee, chocolate, dry fruit, wood and balanced bitterness. Fine body with long lasting, smooth aftertaste. Nice and complex.

Almost clear dark brown beer, small bubbly pale tan head. Palate is impressively light and mildy dry, decent fine minerally carbonation. Smooth but mellow dark malts, a light and creamy sweetness. The sherry barrelling comes through loud and clear, rich, fruity but mellifluous. The soft but rich coffee is a touch of genius, coffee liqueur and it goes with the bold sherry barrelling perfectly. Mild spice on the light finish. Very nice indeed. Never huge fan of Wild Beer but sorry to see them go when you drink a beer like this.

330ml bottle, online from Rad Beer. Pours clear-ish deep brown towards black with a slim tan head. Aroma: all kind of spirit barrels. Taste: heavy sweet & moderate bitter, oak, plenty of spirit barrel character, tannins, red wine, sherry, rum, bourbon, dark berry fruits, chocolate, leather, warming booze. Full bodied, smooth, light carbonation. Definitely a sipper, but a tasty one!

Draught, about 100ml, sample tray at Taphouse. Shiny naked surface, deep black body, scattered lacing. Inviting roasted grainy chocolate malts on the nose, a bourbon scent to it. Well blended taste of chocolate, dark bread, and dark fruit. Sherry-rum impression. Long lived ending, smoothly roasted, alcohol warmth with a bourbon bite. Full bodied, solid stuff. Likable sipper. 330ml bottle @ monthly tasting, Chez Sophie, Sep 21. Thanks Simon for this one! The final boozy beer of a boozy beer share. Pours dark with a pale beige head. Lovely sweet nose giving a complex glimpse of whats to come. Wondrously harmonious barrel aged flavours coming through to taste, bourbon, rum and red wine all contributing nicely with many varying facets to be found as it breathes and lingers on the palate. Excellent sipper.
