For this Druif, we used Dornfelder grapes from Wijndomein Hoenshof in Hoepertingen, Haspengouw region, Flanders. Dornfelder is a dark-skinned variety, originally from Germany. We co-fermented lambic with freshly-pressed-shortly-skin-macerated Dornfelder grape juice in an oak foeder. We let it sit for four months and blended the grape lambic with some fresh lambic wort for the “prise de mousse” in the bottle. The final fruit intensity is 51,7% of grape juice per litre of Druif Dornfelder. 100% 3 fonteinen.

6.8% 43. - 21/22. Deep red wine colour with thin head. Aroma and flavour start with loads of jammy red fruits. Later more funk and sharpness.

Small bubbly-creamy mediumlasting head, dark reddish color. Aroma is slightly dry funky fruity, old rope, hay, grape peel, oak, grain, barnyard, old leafs, minerals, old lawn, hints of popcorn. Taste is slightly dry sour-ish grassy, sorrel, grape peel, minerals, oak, fruit stones, sour grapes, old rope, citrus, bark, flowers, hints of mild vinegar. Medium bitterness, slightly dry sour-ish fruity mouthfeel. Nice taste...

Bottle split at the Level 6 Xmas Bash, thanks to Danny, 15/12/22. Claret pour with a crimson cap. Nose is tarte red berries, funk, wood must, vinous, herb. Taste comprises sharp grapes, funk, dry rot, hedgerow, vinous, funky raspberries, acidic rise. Medium bodied, fine carbonation, semi drying close with a balanced puckering climax. Solid.

Bottle. Poured a slightly cloudy brown color, ruby with a very small head. Aroma was big cherries, funk. Flavor was dark cherries, sour grapes. Blend 27. At the December DC Ratebeer tasting.

From a 75 ml bottle at an RB tasting. Pours a cloudy brown with a scant head. Aromas of dark cherry. Flavors are sour grapes.

750ml bottle is tepid garnet amber with no head. Huge funk nose, classic lambic nose where the base geuze shines. Grape arrives more in the mouth. Light tartness and jamminess, but the base geuze just hums along. Tight. Tart. Dry. Good tannins

75cl bottle (bottled 02/11/2021, blend ˚27, season 20 - 21; 7,7%) from the 3 Fonteinen lambik-O-droom Brewpub shop. F: thin, some off-pink bubbles, C: ruby red with coppery hue, hazy. A: sour cherries, grapes, blue plums, woody, brett, red wine. T: sour cherries, grapes and grapes skin, blueberries, funky, woody, decent bitterness, red wine, bit bready, dry on the palate, very soft carbonation, masterpiece connection of lambic end red wine, full enjoyed.
