Plumage is a 6.1% barrel aged sour farmhouse ale refermented on plums from trees on our farm with our house mixed culture of native Northumbrian wild yeast, brettanomyces and lactobacillus. The acidity from the plums and lacto is tempered by a sweetness from the malt and toasted oak barrels, with a subtle hint of the whisky they used to contain.
