Our first beer to go through our experimental line three times and move its way up to 14 BBL production! A rich, dark, smooth and sweet, full bodied milk stout with Madagascar cocoa nibs from Lake Champlain Chocolates! This is very similar to the Chocolate Doctor Milk Stout that earned a Silver Medal at the World Beer Championships in Chicago in January of 2012. The Silver Medal winner was our second attempt at dialing in our recipe for this version! We thank our good friends at Lake Champlain Chocolates for their local partnership on this project. This beer is delicious and contains lactose!

Big roasty aroma, and yes quite a bit of bitter chocolate. The flavor is quite lactic, with a very full mouthfeel. The carb is nice and soft. The finish is a medium bitter, with more great cocoa notes, and some solid toasted, burnt malts, with a touch of soy.

Poured into a pint glass, the appearance was a thick jet black color that had a finger’s worth of white to off white foamy head that dissipates mildly. Sly lacing.
The aroma starts off with thick sweet milk chocolate, vanilla bean, some dark chocolate, and light roasted coffee bean.
The flavor brings all of the previously mentioned aromas together nicely. Lingering sweet milk chocolate aftertaste leading into the finish.
On the palate, this one sat about a light to medium on the body with a decent sessionability about it. Low carbonation yields a full thick smooth feel on my tongue.
Overall, with all of the thick milk chocolate sweetness running all about, would this be a milk/sweet stout? In my opinion, I would say so.

Enjoyed at the brewpub. Dark brown colour with a nice creamy-foam beige head and dirty lace. Roasted malt nose with coffee notes, molasses, mild dark fruits, vanilla, nut and chocolate. Heavy-medium bodied and a little creamy. The taste is pretty much the same as the aromas, but a little more on the fruit side of things. A pretty good stout, just not feeling the chocolate so much.

Dégustée en fût sur place. De couleur noire et opaque. Nez de chocolat au lait (légèrement lactique), de malt rôti, moyen-léger de chocolat noir avec des notes de café, de houblon herbeux ainsi que des traces de crème brûlée. Moyenne-mince en bouche avec un pétillement doux ainsi qu’une texture moyennement crémeuse. Moyen goût de chocolat au lait (légèrement lactique) et léger de chocolat noir avec des notes de crème brûlée lors de l’entrée en bouche auquel se rajoute un goût de malt rôti avec des notes de pain grillé puis en finale l’on retrouve une légère amertume de houblon herbeux avec des notes de café. Post-goût moyen-long et un peu sec, légèrement amer de rôti et de chocolat avec des notes brûlées, de houblon herbeux et de café. (17 avril 2013)

On tap at the source. Pours a solid black with a creamy off white head that has very little retention. Smells of chocolate in spades. Hints of vanilla and milk sugar, but really this one is all about the chocolate. Taste follows the aroma to a tee. It like drinking an alcoholic milk shake. Creamy smooth mouthfeel, medium body with a moderate level of carbonation. Decent brew and wonderful in its simplicity. Perfect for and chocoholic.
