Phi is a pale strong beer, skillfully balanced between sweet and sour due to the addition of 40% of wheat to the grain bill. Phi is part of the “Omega – Phi – Sigma” trilogy which matures in stainless steel tanks where the Morpheus yeast imparts a refreshing sourness. Phi is a good stepping stone for those who want to familiarize themselves with our Flemish Sour Ales.

Flaska från Etre Gourmete. Gyllenfärgad, ganska grumlig och lågt skum. Frisk syrlig, lätt geuzetouch på doften men lite sötare. Rejäl syra men också sötma, krispig, laktokaraktär, otroligt väl dold alkohol. Påminner mest om gula söta och syrliga stora russin, men syrligare, honung, äppelcidervinäger, citrus och lite funk. Annorlunda och riktigt trevlig utan att vara mitt i prick.

Pours hazy deep golden with a short lasting off-white head. Aroma is sour with notes of malt, alcohol, vinegar and wheat. Taste is medium sweet and light to medium sour. Body is medium to full, texture is oily, carbonation is soft to flat.

Bottle. It pours clear deep orange with a massive, quickly dissipating head. The nose sweet, tangy, musty, spice, nut, plastic and vomit. The taste is crisp, sweet-sour, decent lactic acidity, lime, tangerine, light caramel, sherbet, floral, must, barnyard and wood with a dry, somewhat acidic finish. Medium body, prickly carbonation and foamy mouth-feel. Hides abv well. I quite like the taste, but the nose is rather off-putting. So-so.

Trübes dunkel oranges Bier mit geringer Schaumkrone. Geruch fruchtig, säuerlich, vergorene Früchte. Geschmack säuerlich, Äpfel, vergorener Saft.

Bottle. Hazy orange liquid with medium white head. Aroma of apples, lemon, acetic acid, wood, red berries and wine. Taste is light sweet and light sour with notes of red berries, wood, raw sugar and spices. Medium bodied with medium carbonation. Nice.

Bottle from Dranken Geers, Oostakker, nr Gent, Belgium, consumed at home Sunday 23rd March 2014 Pours murky orange (don’t look very blonde to me) with a bubbly white actually off-white head. Fizzy and a little sour but not too sour, tangy and, tart and fruity. Nice beer that I have to say I didn’t warm to initially, but don’t mind it now. A6 A4 T7 P3 Ov13 3.3

Bottle shared by Martinus @ weekly tasting. Hazy orangy color, average sized soapy white to off-white head that diminishes quickly. Smell yeast and sourness. Taste sourness, yeast and meh. Taste is not that bad, but expectations weren’t that high to begin with. Meh.

Bottle @ benzai. Murky yellow to orange with a small white head. Smells horribly yeasty, slightly sweet and sour. Tastes sour, dusty, fresh, fruity. Medium body, nice carbo.

Draft @ BAB’14. Dorée, un col absent et peu attrayant au visuel. Arôme offre de suite des effluves vinaigrées avec un côté acétique et abricot fermenté. Perçoit ce bouquet typique de Morpheus. Palais est fin, légèrement suret, pointe de vinaigre sur fruit fermenté pour une bière offrant très peu de pétillant. Levure garde le caractère d’Alvinne et au final les 10% se font pas mal présent avec un fini lactique qui n’est pas spécialement agréable au palais.

Draught No head, fully hazy orange-ochre beer. Coriander, bit herbs, bit mallts; rainwater, formic acid. Sour, lactic acid in the flavour, fruity, unripe strawberries, unripe peach. Light body, feels like fruit-filled. Don’t like the nose 100%, but from there it only gets better. Typical Morpheus stamp, IMO.
