Phi is a pale strong beer, skillfully balanced between sweet and sour due to the addition of 40% of wheat to the grain bill. Phi is part of the “Omega – Phi – Sigma” trilogy which matures in stainless steel tanks where the Morpheus yeast imparts a refreshing sourness. Phi is a good stepping stone for those who want to familiarize themselves with our Flemish Sour Ales.

Sampled draft @ Brugs Bier Festival 2014. Hazy orange with absolutely no head whatsoever. Nose is sour rotting grains, vinegar, rotting lactic, doesn’t seem entirely intentional in the sour notes. Taste is sour vinegar, rotting grains, fermenting, sour fermenting lacto, spoiled fruits, grains, herbs. No carbonation. Doesn’t feel in any way 10 % ABV. Doesn’t taste entirely intentional to me, expected more.

22/I/14 - 33cl bottle from Willems (Grobbendonk) @ home - BB:XII/2015 (2014-77) Thanks to Beerlover_Ben for doing my shopping!
Clear dark orange beer, big crackling fizzy yellowish head, unstable, dissipates rather quickly, non adhesive. Aroma: some raspberry vinegar, little sweet, raspberry yoghurt, dairy products. MF: soft carbon, medium body. Taste: pretty sharp sour start, raspberry flavours, red berries, dairy, little bitter, fruity, little sweet even. Aftertaste: some bitter tannins, pretty sour, yet fruity. Raspberries again, yoghurt, pretty metallic bitterness, lemony, bitter touch. Seriously guys, does this beer have raspberries in it? If I were a gambler I would bet on it, but I'm not, so...
