Phi is a pale strong beer, skillfully balanced between sweet and sour due to the addition of 40% of wheat to the grain bill. Phi is part of the “Omega – Phi – Sigma” trilogy which matures in stainless steel tanks where the Morpheus yeast imparts a refreshing sourness. Phi is a good stepping stone for those who want to familiarize themselves with our Flemish Sour Ales.

11.2 ounce bottle from Beer Run, shared at a tasting. Hazy orange with a large creamy white head, decent head retention. Mild gusher. Aroma of tart tropical fruits, cheese, candied fruits, mild floral notes. The taste is tart stone fruits, citrus, yeast, pale malt, spice, SweetTart candy. Medium-full bodied, boozy but it’s well masked, lingering spice.

Bottle at BBF 6, 27/09/14. Clear golden with moderate off white spotting and edgework. Nose is musty woodsville, spice, bitter orange, straw, tangy fruit notes. Taste comprises Beglian yeast esters, candied fruit peel, grain, bready, tangy fruit notes. Medium bodied, fine carbonation, semi drying close with a little damp wood and hay bale. Doesn’t show the ABV but also shows little depth or character ABV considered. Rather whelming!

Very nice tangy apricot-like sour. Light, not in your face. Has a clear amber pour. Sour plum and citrus. Tart finish. Great stuff - seems underrated to me. Bottle at Churchkey thanks to Travlr.
